After 8 years of making cakes, yesterday was the first time we were asked to make a cake that was used for a proposal🤩

I mean—cake is the way to most people’s hearts, so we totally get it 💛 fellas, take notes!

🎀LUNA’S FIRST BIRTHDAY CAKE🎀

We tried out a different style of cake today and we absolutely love how it turned out 🤩

The flavor is strawberries and cream which is by far our #1 most popular cake flavor. It’s made of:
✨Soft Vanilla Bean Cake
✨Homemade Strawberry Jam 🍓
✨Fresh Sliced Strawberries 🍓
✨Whipped White Chocolate Ganache

📸 We just got this photographer picture back of this super tall 5-tiered cake from November 🤩

The entire cake is completely real and featured an internal system of boards and dowels to keep the entire cake upright! For each tier to support the combined weight of the top tiers, we have a few tricks:

✨ONE
Each tier sits on a cardboard round and we vertically insert 3 dowels (which look like milkshake straws) that create an internal skeleton for the cake. Why 3? This is advice from my engineer dad 🤓 who always tells me that you only need 3 points to create a plane. The dowels simultaneously push up and down on the boards and the weight is evenly distributed.

✨TWO
The tiers are completely frozen for at least 8 hours before delivery. This ensures that the buttercream is not soft and will hold up the 5+ hours the cake will be out before serving. As the cake sits out it defrosts and the guests will have perfectly cold cake when it’s time to serve. This can only be done with cakes that don’t have any fruit inside—which Iuckily this one didn’t 😉

✨THREE
We completely ice each cake with white chocolate ganache before adding the final layer of Swiss Meringue Buttercream. Because of the cocoa butter in white chocolate, ganache is a super stable cream that doesn’t get too affected by moisture or temperature. It acts as a type of cement or spanx 🤣 for the cake and holds everything together.

There’s a lot of logistics and surprisingly a lot of math and science that goes into making a cake like this. I actually love that you can’t tell any of this when you observe it—the cake takes on a life of its own and how it got there is not important💛

✨Elegant silver & white pearl design for this 5-tiered Wedding Cake to match the bride’s dress!

With simple designs like this one, we try to put all of our focus on keeping the icing perfect & making sure the cake is completely level. Normally you can hide any imperfections with the decorations, but not with this type of design. It adds an extra challenge, but ends up looking very clean and perfect for a wedding 💛
