Dear all!

After closing the shop and the bakery, it is now time to let go of some of items that were part of my bakery, including special Baking tins that I ordered from Belgium and had shipped to Houston to bake my breads in as well as "left-overs": some Warthog and Frederick grain that I would love to mill before I leave, some honey as well as nuts and dried fruits that I used in my several breads and pastries.
To that end, I am organizing a garage sale that includes these items at very reduced prices from the shop. If you are interested, please feel welcome on Saturday, June the 5th between 7 am and 11 am at 1819 Latexo Drive.
In the coming days, I will post pictures of the items for sale on Instagram, including their asking price :-)
But even if you don't need anything, please drop by anyway for a cup of coffee and a change to say goodbye!

Please note the change in hours! My breads will be available through the website https://www.dutch-fika.com or at Central City Co-Op. The selection has been concentrated to the two breads that are unique to Houston: 100% rye sourdough bread (German-style) and a rye/wheat sourdough pumpernickel style with seeds, dried fruits and nuts.

Due to the loss of both power and water, I won't be able to provide any baked goods - breads nor pastries - this weekend. Dutch Fika baking starts with milling and I am not able to mill in time to then create enough pre-sourdough that goes into the breads.
I hope everybody is and stays well!! Take good care of yourself and your neighbors

This February, Dutch Fika was welcomed by Central City Co-Op, our local daily farmers market in . I am incredibly honored that the co-op has found my bread to live up to their high standards. Central City Co-Op strives to bring fresh sustainably grown produce, dairy and meats straight from local farmers to the table AND support local artisan bakers and chefs who strive to deliver fresh foods made with sustainably grown, non-processed ingredients. This is a win-win, as it means that I now have direct access to farm fresh dairy, eggs, herbs and fruits all in one place.

Adjustment and change are constant companions of small business owners; making the most of all your resources, including time. True co-ops can only be successful if the members contribute to its existence. And so I can be found at the co-op every Tuesday and Wednesday morning, milling flour, packing orders and welcoming customers. But those hours need to come from somewhere. In this case, I will be taking them from my Friday opening hours. But don't worry: the shop will still be open on Saturday and Sunday AND you will be able to shop for fresh Dutch Fika sourdough breads and pastries - well a selection of them - at Central City Co-Op

And in the shop we have Groninger koek (Dutch Sunday bread - https://www.dutch-fika.com/product-page/dutch-heritage-bread-groninger-koek) with candied orange peel, French madeleines with lime zest or Grand Marnier/Almond, Macarons with grapefruit curd and Roatan bread (with black cacao, espresso and orange peel - https://www.dutch-fika.com/product-page/roatan-whole-wheat).
As always, order up front if you don't want to run the risk of leaving the shop empty handed, or if you want your order to be dropped off at your doorstep.

The idea of Dutch Fika finds it origin in several events taking place almost simultaneously.

First, at the end of the summer of 2018, after 6 glorious weeks in Sweden, I returned to Houston and to my local Kroger store to find that their 9-grain bread had disappeared. None of the other breads on offer got a positive vote in our family and so I started baking my own bread with a Kitchen Aid machine that I had bought from a family that was moving to Italy.

At the same time, the Swedish-American Chamber of Commerce was organizing its yearly summit in Houston and the Chairman of the Texas chapter dreamt about having genuine kanelbulle at the coffee breaks (fika in Swedish). Kanelbulle is a favorite of ours, and so I offered to make this typical Swedish coffee-bread with cardamom, cinnamon and pearl sugar for the expected 160 guests. And practice makes perfect, so we all enjoyed this event very much!

On top of that, it had been over a year since I had been in a genuine laboratory. My consulting job was a pure paper/computer job and I found that baking of bread to be the perfect substitute for ‘regular’ pharmaceutical R&D work! However, my bread production increased at the same pace as my baking days did. And so this new lab-work - that structured my day around my pharmaceutical consulting work - needed a costumer. The solution: the Farmers’ market in my neighborhood. And so Dutch Fika came into being.
