Friday was my hubby's birthday. Decided to make him a special cake. I got this recipe from an amazing friend (thanks Jamie!) - 3 layers of carrot cake filled with coconut, shredded pineapple, and walnuts, all soaked with a buttermilk glaze and frosted with a cream cheese frosting (and a bonus layer of caramel buttercream leftover from Monday). So delicious!
