Raspberry Oreo No Bake Dessert🍓

Ingredients🍓

5 ounces Oreo Cookies (150 grams)
8 ounces Whipping Cream (240 ml)
3 tablespoons powdered sugar
2 tablespoons Nutella
1½ cup Fresh Raspberries (180 grams)

Instructions 🍓

In a food processor, pulse the Oreo cookies until they look like crumbs. Set aside.
In a mixing bowl, whip the cream with powdered sugar until stiff peaks form. Transfer half of the whipped cream into a separate bowl. Mix the whipped cream that is left in the mixing bowl with 1 cup of fresh raspberries, using electric whisk. Add Nutella to the other bowl with whipped cream and stir until well combined.
Assemble the desserts: Oreo crumbs + raspberry cream + Nutella cream + fresh raspberries + Oreo crumbs + raspberry cream + fresh raspberry as a garnish.
Chill in the fridge for 1-2 hours before serving.

Sausage Pinwheels 🌭

Ingredients 🍚

Tbsp. extra-virgin olive oil

8 oz. ground Italian sausage

1/2 cup finely chopped red bell pepper

8 oz. cream cheese, softened

3 oz. sharp white cheddar, grated

3 cloves garlic, grated

1/2 tsp. kosher salt

2 (8-oz.) cans crescent roll dough

Directions🍚

Step 1
In a medium skillet over medium-high heat, heat oil. Cook sausage, breaking up with the back of a wooden spoon or a fork, until crumbly and no longer pink, about 6 minutes. Add bell pepper and cook, stirring, until just softened, about 3 minutes. Transfer to a plate and let cool 10 minutes.
Step 2
Meanwhile, in a small bowl, mix cream cheese, cheddar, garlic, and salt until combined.
Step 3
On a work surface, roll dough to a 13" x 5" rectangle. Pinch seams together on both sides. Using an offset spatula, spread cream cheese mixture over dough, leaving about a 1/4" border on all sides. Sprinkle sausage mixture over, lightly pressing into cream cheese to keep any pieces from falling out when rolling.
Step 4
With a long side facing you, tightly roll dough away from you into a log. Arrange seam side down on a parchment-lined baking sheet. Freeze 20 minutes.
Step 5
Arrange racks in upper and lower thirds of oven; preheat to 375°. Cut log into 1/2" rounds. Arrange rounds cut side down on 2 parchment-lined baking sheets, spacing 1 1/2" to 2" apart.
Step 6
Bake pinwheels, rotating sheets front to back and top to bottom halfway through, until dough is golden brown and puffy on top, about 20 minutes.

Buttery Flaky Croissants 🥐

Ingredients
1/4 cup (4 Tbsp; 56g) unsalted butter, softened to room temperature
4 cups (500g) all-purpose flour (spooned & leveled), plus more for rolling/shaping
1/4 cup (50g) granulated sugar
2 teaspoons salt
1 Tablespoon active dry or instant yeast
1 and 1/2 cups (360ml) cold whole milk
Butter Layer
1 and 1/2 cups (340g) unsalted butter, softened to room temperature
2 Tablespoons (16g) all-purpose flour
Egg Wash
1 large egg
2 Tablespoons (30ml) whole milk

Instructions
Preliminary notes: Watch the video below and use the step-by-step photos before you begin. Read the recipe before beginning. Make room in the refrigerator for a baking sheet. In step 6 and again in step 13, you will need room for 2 baking sheets.
Make the dough: Cut the butter in four 1-Tablespoon pieces and place in the bowl of an electric stand mixer fitted with the dough hook attachment (or you can use a handheld mixer or no mixer, but a stand mixer is ideal). Add the flour, sugar, salt, and yeast. Turn the mixer on low-medium speed to gently combine the ingredients for 1 minute. With the mixer running, slowly pour in the milk. Once all of the milk is added, turn the mixer up to medium speed and begin to knead the dough.
Knead the dough: Keep the dough in the mixer and beat for an additional 5 full minutes, or knead by hand on a lightly floured surface for 5 full minutes. (If you’re new to bread-baking, my How to Knead Dough video tutorial can help here.) If the dough becomes too sticky during the kneading process, sprinkle 1 teaspoon of flour at a time on the dough or on the work surface/in the bowl to make a soft, slightly tacky dough. Do not add more flour than you need because you do not want a dry dough. After kneading, the dough should still feel a little soft. Poke it with your finger—if it slowly bounces back, your dough is ready to rest. You can also do a “windowpane test” to see if your dough has been kneaded long enough: tear off a small (roughly golfball-size) piece of dough and gently stretch it out until it’s thin enough for light to pass through it. Hold it up to a window or light. Does light pass through the stretched dough without the dough tearing first? If so, your dough has been kneaded long enough and is ready to rest. If not, keep kneading until it passes the windowpane test.
Remove dough from the bowl and, with floured hands, work it into a ball. Place the dough on a lightly floured silicone baking mat lined, lightly floured parchment paper lined, or lightly floured baking sheet. (I highly recommend a silicone baking mat because you can roll the dough out in the next step directly on top and it won’t slide all over the counter.) Gently flatten the dough out, as I do in the video below, and cover with plastic wrap or aluminum foil. Place the entire baking sheet in the refrigerator and allow the covered dough to rest in the refrigerator for 30 minutes.
Shape the dough: Remove the dough from the refrigerator. I like to keep the dough on the silicone baking mat when I’m rolling it in this step because the mat is nonstick and it’s a handy guide for the exact measurement. Begin flattening out the dough with your hands. You’re rolling it out into a rectangle in this step, so shaping it with your hands first helps the stretchy dough. Roll it into a 14×10-inch rectangle. The dough isn’t extremely cold after only 30 minutes in the refrigerator, so it will feel more like soft play-doh. Be precise with the measurement. The dough will want to be oval shaped, but keep working the edges with your hands and rolling pin until you have the correct size rectangle.
Long rest: Place the rolled out dough back onto the baking sheet (this is why I prefer a silicone baking mat or parchment because you can easily transfer the dough). Cover the rolled out dough with plastic wrap or aluminum foil, place the entire baking sheet in the refrigerator and allow the covered dough to rest in the refrigerator for 4 hours or overnight. (Up to 24 hours is ok.)
Butter layer (begin this 35 minutes before the next step so the butter can chill for 30 minutes): In a large bowl using a hand-held mixer or stand mixer fitted with a paddle or whisk attachment, beat the butter and flour together until smooth and combined. Transfer the mixture to a silicone baking mat lined or parchment paper lined baking sheet. (Silicone baking mat is preferred because you can easily peel the butter off in the next step.) Using a spoon or small spatula, smooth out into a 7×10-inch rectangle. Be as precise as you can with this measurement. Place the entire baking sheet in the refrigerator and chill the butter layer for 30 minutes. (No need to cover it for only 30 minutes.) You want the butter layer firm, but still pliable. If it gets too firm, let it sit out on the counter for a few minutes to gently soften. The more firm the butter layer is the more difficult it will be to laminate the dough in the next step.
Laminate the dough: In this next step, you will be rolling out the dough into a large rectangle. Do this on a lightly floured counter instead of rolling out on your silicone baking mat. The counter is typically a little cooler (great for keeping the dough cold) and the silicone baking mat is smaller than the measurement you need. Remove both the dough and butter layers from the refrigerator. Place the butter layer in the center of the dough and fold each end of the dough over it. If the butter wasn’t an exact 7×10-inch rectangle, use a pizza cutter or sharp knife to even out the edges. Seal the dough edges over the butter layer as best you can with your fingers. On a lightly floured counter, roll the dough into a 10×20-inch rectangle. It’s best to roll back and forth with the shorter end of the dough facing you, like I do in the video below. Use your fingers if you need to. The dough is very cold, so it will take a lot of arm muscle to roll. Again, the dough will want to be oval shaped, but keep working it with your hands and rolling pin until you have the correct size rectangle. Fold the dough lengthwise into thirds as if you were folding a letter.

Super Moist Lemon Cake 🎂

Ingredients
8 tbsp unsalted butter, melted
1 cup powdered sugar
Zest of 1 lemon (preferably organic)
4 tbsp lemon juice
3 eggs
1-1/4 cupscake flour
1 ½ teaspoons (approximately 6 g) baking powder
Lemon syrup
5/8 cups water
2 tbsp granulated sugar
2 tsp lemon juice

Instructions🎂

Preheat oven to 350°F (175°C). Grease and line a suitable cake pan (e.g., tube pan, loaf pan) with baking paper or spray with a non-stick baking spray.

Melt the butter and in a bowl, combine it with the powdered sugar, mixing thoroughly. Don't worry if it looks separated at this stage.

Add the lemon zest and lemon juice to the mixture.

Incorporate the eggs one at a time, mixing well after each addition. The batter will come together more smoothly.

Sift in the cake flour and baking powder. Gently mix until just combined, avoiding over-mixing to keep the cake light and airy.

Pour the batter into the prepared cake pan, ensuring it's evenly spread.

Bake for approximately 50 minutes, or until a toothpick inserted into the center comes out clean. Avoid opening the oven door too early to prevent the cake from sinking.

While the cake bakes, prepare the lemon syrup. Combine water and granulated sugar in a small saucepan and bring to a boil. Remove from heat and stir in the lemon juice.

Once the cake is done, remove it from the oven. While still hot, carefully remove the cake from the pan (being cautious to avoid burns) and place it upside down on a wire rack.

Brush the warm lemon syrup liberally over the cake, allowing it to soak in. To ensure maximum moisture retention, immediately wrap the cake tightly in plastic wrap to prevent evaporation.

Let the cake cool completely before slicing and enjoying.

Optional garnish🍚: Consider adding fresh lemon slices and chopped pistachios for an elegant presentation.

Tips for extra moisture🎂

Room temperature ingredients: Ensure eggs, butter, and any dairy are at room temperature for better mixing and a lighter cake.

Don't over-mix🚫: Over-mixing develops gluten, which can lead to a tough cake. Mix until just combined when adding dry ingredients.

Don't over-bake🚫: Over-baking dries out cakes quickly. Test for doneness with a toothpick and remove promptly when it comes out clean or with minimal moist crumbs.

Use yogurt or sour cream🍨: Adding yogurt or sour cream contributes significantly to a moist and tender crumb.

For the Shortbread Cupcakes:🧁

1 cup (226g) butter, softened
1/3 cup (70g) white sugar
1/3 cup (70g) light brown sugar, packed
1 large egg yolk
3/4 tsp vanilla extract
1/2 tsp salt
2-1/4 cups (260g) all-purpose flour
For the Buttercream Frosting (optional):
1/2 cup (113g) butter, softened
1 ½ cups (180g) confectioners' sugar
3 tablespoons milk
½ teaspoon vanilla extract

Instructions🍚

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
Cream Butter and Sugar: In a large bowl, beat together the softened butter and both sugars with an electric mixer until light and fluffy.

Add Wet Ingredients: Mix in the egg yolk and vanilla extract until well combined.

Add Dry Ingredients: Gradually add the flour, about 1/2 cup at a time, along with the salt.

Mix until the dough just comes together, scraping the bowl as needed. Do not overmix.

Bake:
Bake for about 10-12 minutes, or until the edges are lightly golden.

Cool:
Allow the shortbread bases to cool completely in the muffin tin before removing them to a wire rack.

To make the optional buttercream frosting:🧈

Cream Butter: In a bowl of an electric mixer, combine the softened butter and confectioners' sugar and mix on low speed until just combined.

Add Flavoring: Gradually add the milk and vanilla extract. Beat on a high speed until the frosting is light and fluffy.

Frost Cupcakes: Once the shortbread bases are completely cooled, you can frost them with the buttercream frosting and decorate as desired.

Kentucky Jam Cake 🎂

Ingredients

CAKE🎂

1 cup butter unsalted, at room temperature
1 cup granulated sugar
2.5 cups all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon dried ginger
⅛ teaspoon ground cloves
3 large eggs at room temperature
1 cup blackberry jam seedless
1 cup buttermilk at room temperature
CARAMEL FROSTING
4 cups brown sugar packed
½ cup butter real butter, no substitute
5 ounces whole milk
⅛ teaspoon salt
½ teaspoon baking powder
½ teaspoon pure vanilla extract
1 tablespoon heavy whipping cream

Instructions:

CAKE🎂

Preheat your oven to 350°F.

Grease and flour three 8-inch cake pans with solid vegetable shortening and flour.

In the bowl of your electric mixer, cream the butter and sugar until light and fluffy. Stop the mixer and scrape down the sides.

With the mixer on low, add the eggs one at a time allowing the yolk to disappear into the mixture before adding the next egg.

Stop your mixer and scrape the sides.

In a separate bowl, add the sifted flour, salt, baking soda, cinnamon, ginger, and cloves.

To your butter/sugar mixer in the bowl of your electric mixer, add the jam, once it's incorporated add 1/3 of the flour mixture.

Next add 1/2 of the buttermilk, followed by another 1/3 flour, 1/2 buttermilk, and final 1/3 flour.

Stop the mixer and scrape the sides.

Mix to incorporate everything one last time.

Pour the batter equally into your prepared 8-inch cake pans.

Smooth the top evenly.

Bake for 24 to 27 minutes at 350°F.

You can test the cakes by inserting a wooden pick into the center of the cake. If it comes out with dry crumbs or no crumbs the cake is done.

Cool in the cake pan for 10 minutes before inverting on a wire rack to cool completely. Frost after the layers have cooled completely.

CARAMEL FROSTING🍚

Bring the sugar, butter, milk, and salt to a boil. Boil 3 minutes stirring often.

Remove from the heat. Add baking powder and vanilla. Beat at med speed with an electric mixer for 5 minutes or until it begins to get thick.

Stir in 1 tablespoon heavy cream.
Place one cake layer on your cake stand. Level the layer is it's taller in the center.

Then, pour about 3/4 cup caramel over the cake. I allow it to drip down the sides naturally but you can frost it traditionally on the sides. Work fast frosting the cake, as the frosting cools it gets thick and harder to work with.

Top the bottom later with another layer and pour icing over it.

Finally, place the third cake layer on the others and pour caramel icing over it. This recipe makes enough to frost a 3 layer cake and sides.

Sweet Potato Pie with Golden Deep-dish Crust

Ingredients🥧

2 pounds sweet potatoes, washed (equals about 3 cups when softened and peeled)
4 ounces unsalted butter, softened
2 large eggs
½ cup light brown sugar
½ cup granulated sugar
½ teaspoon ground ginger
1 teaspoon ground nutmeg
1 teaspoon ground cinnamon
½ teaspoon ground cloves
¼ teaspoon salt
1 cup evaporated milk
2 teaspoons vanilla extract
1 9-inch pie crust

Instructions🥧

Preheat the oven to 425℉/218℃.
Line a baking sheet with foil and spray with baking spray.
Wash and dry sweet potatoes using a paper towel.
Pierce them with a fork several times, place them on the prepared baking sheet and bake for 45 minutes or until very tender.
Grease a 9-inch pie pan using a baking spray, add pie crust, and set it aside.
Once the sweet potatoes are ready, take them out of the oven and let them cool. After they're cool to the touch, peel and discard the skin.

Place potato in a mixing bowl and mash using a handheld mixer.
Next, add the softened butter and continue mixing till thoroughly combined, about a minute.
Next, add eggs and mix to combine.
Add white sugar, brown sugar, ginger, nutmeg, cinnamon, cloves, and salt.
Continue mixing until everything is fully incorporated.
Finally, add evaporated milk and vanilla, and mix until fully combined.
Pour the filling into the pie crust and bake at 350℉/177℃ for about 50-60 minutes or until the top is nicely browned or a skewer inserted in the middle of the pie comes out clean.
Remove it from the oven, and allow it to cool for at least 30 minutes.
