Bread doesn’t need to be complicated.
Our original sourdough is made with 4 ingredients: bread flour, water, salt, and sourdough starter.
Mass produced bread is made around a set of priorities: high speed production, uniform softness, long distribution cycles, and extended shelf life. That can mean added sugars, oils, preservatives, emulsifiers, and dough conditioners.
Those ingredients aren’t automatically harmful. But they’re often doing things that have more to do with processing, consistency, and shelf life than making high quality, nutritious bread.
We use 4 ingredients and give them something production bakers try to minimize: time.
Research supports there are benefits from traditional sourdough fermentation, including potential improvements in blood-sugar response, nutrient availability, and digestibility.
