It comes down to a personal preference I think, despite what's "traditional". Do you prefer a crunchy or soft outer cookie shell? I think I prefer macarons closer to La Tour Cafe's but the crunchy ones are growing on me...lol literally 😆

Did you know this? I had no idea until I started making macarons. This is true for probably 95% of macarons. The other 5% will use cocoa powder or flavored powdered sugar.

Vanilla bean sugar is one of my favorites! It's a 1:1 swap. I use in for macaron shells, coffee, crème brûlée, rolled sugar cookies and in tons of other desserts 💕
