Einkorn is special because it is considered a "First Wheat" or "Original Wheat" and also, "Ancient Wheat." Nothing has changed about it since it was first discovered, so you can expect what you're eating to be better for you. It has not been genetically altered from what it once was to what the "Frankenwheat" is like today.
Einkorn has a 14 chromosomes , whereas modern wheat has a 42 chromosomes which changes the gluten structure. ( Einkorn.com )
Einkorn is not gluten free, but it is more digestible than modern wheat.

I use Einkorn flour from Jovialfoods.com to make my sourdough breads and Einkorn treats. Their wheat comes from Italy, where farming is very strict. As an added bonus, their einkorn is organic!
