Never waste good sourdough discard.
Added 75g of discard to a batch of potato buns today and they turned out beautifully. Soft, fluffy, and burger-ready.

Mastering the artisan sourdough pan loaf! 82% hydration. Yummy!

By accident I created the best artisan sourdough pan loaf. I asked ChatGPT to recalculate ingredients for a smaller loaf pan size and it failed amazingly. Instead of the 70% hydration I asked for, it spit out a 82% loaf recipe…and this might be the best pan loaf yet.

I admit, when I’m not baking, I’m a pizza snob. New Haven, New York, Detroit style, I love ‘em all. This is my 4day cold fermented sourdough New York Pizza. 65% hydration…light, airy, with the right amount of chew. A baker’s gotta eat right?
