Readying the biscuits is one of the last tasks before I go to bed and baking them the following day is the start of a good morning. At Two Clay Birds, fresh isn’t a buzzword — it’s how we cook. Herbs snipped straight from our raised beds. Fresh-from-the-garden Summer tomatoes at their peak. Locally-grown sweet figs picked just right. Bread baked fresh in-house, every single day. Even our meats are roasted here in our own kitchen, including locally-made ham and bacon you won’t find anywhere else.

New sandwich alert! Introducing… the Hico Ham!

We’re excited to bring you our newest creation, made with local ingredients from right here in Hico! It starts with sourdough pecan bread, spread with garlic aïoli and our housemade pimento cheese, then piled high with ham made right here in Hico by the Chophouse. We top it off with housemade pickles, local tomatoes, and fresh arugula.

With the warm weather we’ve been having, this cool, light sandwich is the perfect lunch to keep you refreshed and satisfied. Pair it with a side of potato chips, or try our housemade potato and green bean salad tossed in Italian pesto.
