Trying out a new high-protein recipe today! Recipe below 👇🏼

Mix:
• 500g bread flour
• 300g water
• 100g active starter
• 125g cottage cheese (blended with the protein powder and a little water)
• 30g unflavored protein powder
• 7g salt

Rest 30–60 min.

Do 3 rounds of stretch and folds, 30 minutes apart.

Shape and refrigerate overnight.

Bake at 450°F:
• 20 min covered
• 25–30 min uncovered

Cool completely before slicing.

More protein. Same sourdough goodness. 🍞🔥

Here’s a quick and somewhat simple scoring tutorial. In the end the dough decided to tear right on top of the design, sometimes that happens. Still a beautiful loaf and tastes amazing 👌🏼
