Y’all. Me and Lindros are SUCH picky eaters, especially when it comes to vegetables, but this recipe left nothing in the pan!! Lindros’ rating: 10/10 ⭐️
Creamy Garden Zucchini & Sausage Skillet
Ingredients:
* 1 (13-ounce) package roasted garlic sausage, sliced into rounds
* 2 tablespoons olive or avocado oil
* 3–4 cloves garlic, minced
* 1½ cups heavy cream
* ¼ cup chicken broth
* ½ cup freshly grated Parmesan cheese
* 1 cup fresh spinach
* 2–3 fresh garden tomatoes, diced
* 2 medium zucchini, spiralized into noodles
* Fresh basil, chopped, for garnish
Seasonings
* 1½ teaspoons Italian seasoning
* 1 teaspoon garlic powder
* 1 teaspoon onion powder
* 1 teaspoon paprika
* ½ teaspoon dried oregano
* ½ teaspoon dried basil
* Sea salt, to taste
* Freshly cracked black pepper, to taste
* Pinch of red pepper flakes (optional)
Directions
1. Spiralize the zucchini into noodles and set aside. If your tomatoes are especially juicy, dice them and let them drain on a paper towel while you prepare the rest of the dish.
2. Heat the olive oil in a large skillet over medium heat. Add the sliced sausage and cook for 5–7 minutes, turning occasionally, until browned and slightly crispy around the edges.
3. Stir in the minced garlic and cook for about 30 seconds until fragrant. Add the diced garden tomatoes and cook for another 3–4 minutes, allowing them to soften and release their juices.
4. Pour in the chicken broth and heavy cream, then stir in the Parmesan cheese. Season generously with the Italian seasoning, garlic powder, onion powder, paprika, oregano, basil, salt, and plenty of freshly cracked black pepper. Bring the sauce to a gentle simmer.
5. Let the sauce cook for 5–7 minutes, stirring occasionally, until it thickens. Add the spinach and cook just until wilted.
6. Toss the zucchini noodles into the skillet and coat them well with the creamy sauce. Cook for 2–4 minutes, just until the noodles are warmed through but still have a slight bite.
7. Finish with fresh basil and an extra sprinkle of Parmesan before serving.
*Tip:Fresh garden tomatoes release more liquid than sun-dried tomatoes, so if your sauce becomes thinner than you'd like, simply let it simmer for a few extra minutes before adding the zucchini noodles.
