It’s been about 3 months since I closed the bakery and a day hasn’t gone by that I haven’t thought about it multiple times throughout each day. This includes the 19 years of dreaming about opening my own bakery, the two years the bakery was open and all of the wonderful customers here at Lake Gaston and beyond that supported me and the bakery. It took me until last night to FINALLY bring myself to read all the incredibly kind and supportive comments, messages and texts that so many people had left for me. I’m sorry I haven’t responded, but I promise I will be doing so this weekend to each of you.😊
Because so many of you have reached out to me asking if I would bake some of the signature things you loved getting from the bakery, that you could come pick up from me or have me ship to you and because I miss baking so much, I’M GOING TO BE OPENING THE BAKERY BACK UP AS A POP-UP BAKERY ONLY TWO WEEKENDS A MONTH BEGINNING MEMORIAL DAY WEEKEND, MAY 23rd.
I’m still in the process of figuring out all the legalities and details of doing this which include, finding a certified kitchen to bake from in order to have a health inspection, business/operating permits, renewing my business license, insurance, taxes and a location. Also, I’ll need to find out what guidelines and restrictions might still be in place because of COVID-19. If anyone knows of a certified kitchen in the Littleton area that I can rent on an hourly or daily basis, please let me know.
Another huge reason I want to do this is because some of you may remember that I had hoped to donate leftover items to local charities and I was never able to do that. After watching a show last night on tv that aired to raise awareness and money for Feeding America which is the nation’s largest domestic hunger-relief organization, I knew exactly what I had to do!!! It was a reunion special of one of my favorite tv shows, Parks & Recreation and it helped me to make my decision about baking again. I’ll be partnering with Feeding America to donate a portion of the money brought in from the pop-ups each month. My goal will be to donate $700 per month. According to their website......
“Raising and donating $700 to your local food bank would translate to 2100 meals.” and I can’t think of a better way to spend $700!!! I have said many times that if I won the lottery, I’d still have my bakery and just give everything away for free. Not a great business model I know, but it’s the truth!!!😊

Leslie: “I do. I always carry emergency s’mores rations in my car.”
