Thank you everyone for a wonderful semester of baking! I'm truly honored that my baked goods are welcomed to your familys' tables and celebrations. Yesterday during pickup a few folks asked with trepidation if I planned on continuing baking. You can count on my being back in the fall...I definitely have at least one semester left in me before retirement! Have a wonderful, restful summer. I'll see you in August. ~Cathy

Cracked Corn Sourdough Loaf with Parmesan

This loaf was inspired by a customer who brought me half a loaf from Ibis Bakery (worth a visit if you're in the KC area), and wanted to know if I could make it. A little improvisation and a couple of tries later, it's on the menu (I love a challenge)! A thyme scented porridge of cracked corn (aka polenta) is mixed into a naturally leavened country loaf and punctuated with cubes of Parmesan cheese. Savory, earthy, tangy, moist, chewy and delicious!
