One of the reasons I chose to start YHWH Bread Co.

In London, a loaf of bread molds in about a week.
In LA, the same loaf sits untouched for 1–2 months
…no mold, no change.

Bread is supposed to mold.
That’s literally what real food does.

So when a loaf can sit for weeks sometimes months without change…

That’s not just convenience.
That’s a sign something has fundamentally changed about what we’re eating.

Maybe we should be talking about that more.
