Carr's Ciderhouse produces small-batch hard cider, apple cider vinegar, cider syrup, and switchel. Our young orchard of 1500 apple trees was planted in 2007 on the north-west slope of Mount Warner in North Hadley, Massachusetts. A spectacular view of the Connecticut River Valley spreads out below the orchard, but more importantly, our shallow sandy-loam soil, underlain with quartzite and feldspar

bedrock, enables us to grow intensely-flavored apples of high sugar content. We press our apples on a refurbished century-old Mount Gilead cider press (one of the oldest working presses in New England, we suppose) in the ciderhouse on the hillside when the weather starts turning cold. After a long, slow, relatively cool (50-60 degrees) fermentation, it is allowed to settle before being racked, blended and bottled. We don’t rush this process by force-filtering or other strong-arm methods because we think our ciders are very special. They are complex, crisp, and rich and pair beautifully with appetizers, farmstead cheese, pork or chicken dishes, and fruit desserts.

We’re excited to tell you all about a cool thing happening over here at Preservation Orchard & Farm this spring. Together with our co-farmer and dear friend, Matt Kaminsky , we got a SARE (Sustainable Agriculture Research & Education) research grant! It’s titled
Evaluation of Novel Wild Apple Hard Cider Cultivars for the North East and with it we are testing 10 of the best wild apple cultivars from the annual pomological exhibition (that Matt organizes every year) in modern orchard conditions. Will these robust wild apple varieties prove their resilience and disease resistance in the unforgiving conditions of cultivated orchards subject to higher disease and pest levels than they have in a natural ecosystem? We sure hope so!

We’ve been grafting for weeks now and will grow these young trees out in a nursery for another year before planting them in the orchard.

Friday is coming at us like this wee babe!

We can’t wait to see you and it looks like - just maybe - the weather is going to cooperate on Friday. We’ll have the first of our ciders of the season on tap and will be doing their good things.

We didn’t get our order of crackers on time but will have plenty of nice cheese in the farmstand to go along with whatever you bring 😬.

It’s baby time! This little doeling is named Happy Birthday (Hap for short because she has an adorable gray shawl over her shoulders- see it?). 5 kids so far and more on the way. We all feel like the Cider Garden should be open already- what with this amazing weather we’ve been having- but it won’t be long. Opening day is May 15, and we are very excited to welcome you all back for a season of delicious cider, beautiful community, and the best pizza from (who will be here every day we’re open this season- except for opening day. Isn’t THAT awesome news!). We are getting the place ready, and trying not to fret about the hard cider that spent most of the winter frozen because it got so cold so early and only just thawed! The fermentations are rocking and roiling along now but we were hoping it would be quite finished by this point. However, the cider that is finished is AMAZING, so there will be a few to choose from at the bar.
If you have been by to get stuff at the shop and noticed that the goat barn is empty, don’t worry! We just moved the goats to the back and will be walking them out to a sweet new area every weekend to spend time with you. Baby goats should start arriving this week so stay tuned for excellent instagram content.
It was quite a winter and we missed you. This spring has been full of beauty right here in our spot on earth but also full of anxiety and worry about the crazy and horrible things that the US/Israel continue to inflict on the world- It has to be said but we can talk about it more later. Let’s. Xo

Hi friends. How is everyone doing? We miss seeing your faces and though it’s not here yet - the cider garden is looking pretty wintry- spring is coming and it will be so good to gather together. It’ll be important to connect with friends and neighbors more and more in these crazy and uncertain times. We feel grateful to have that way to connect built into our lives. Thank you for showing up with such a bounty of goodness and love.

Today we racked our first cider off their lees into its permanent tank- Wild Apple! It is quite delicious and it’ll be on tap in May when we open ( and in bottles before then, most likely).
