Summertime means experimenting in the kitchen. So far we have had carrot cake with pecan pie filling and cream cheese frosting, and peanut butter cup pie (GF graham cracker crust, with layers of chocolate ganache, caramel and peanut butter mousse). All homemade and all delicious!

-Gluten free caramel brownies (so fudgy!)
-Vanilla cupcakes with vanilla frosting flowers (for my cupcake decorating club where I taught them how to make buttercream flowers)
-Brownies with an oreo cream cheese frosting (for Emmy's daycare during teacher appreciation week)

This was a bittersweet bake for me. Sweet because I got to bake for a church lunch we had after baptisms and our girl's baby dedication. Bitter because it's the last time in a while that I will get to bake for my church family.

Cookies and cream cupcakes for Emmy's teacher appreciation week (2 weeks ago-- I know, I am a bit late posting). Daycare workers deal with a lot, and don't seem to get as much recognition as they deserve. Without them, we couldn't work! So thank you!

If you like coconut then this cake is for you! Soft coconut cake with coconut pastry cream and coconut macaroon filling, covered in coconut cream cheese frosting and toasted coconut. Did I mention it is all gluten-free?? This is one of my favorites so far!
