These are some of the comments we hear each and every weekend. Our products are not for everyone. People who care about what’s in their food and how their food is made understand that we don’t cut corners.

🧐 What goes into a loaf of our bread?
👇 More than most people realize.
This week’s prep is a perfect example.
While many commercial bakeries rely on pre-made flavorings, concentrates, powders, and processed ingredients, we start with actual fruit. Every lemon is hand-selected, hand-washed, hand-zested, hand-juiced, and slowly prepared in small batches before it ever makes its way into our dough.
That means hours spent:
✔️ Washing and sorting
✔️ Hand-zesting fresh lemons
✔️ Juicing each one individually
✔️ Simmering ingredients from scratch
✔️ Mixing and preparing fillings and inclusions by hand
The reality is that our ingredient preparation alone adds nearly a dozen extra labor hours every week compared to using commercially processed ingredients.
Could we save time by buying pre-made fillings and artificial flavorings?
Absolutely.
But that’s not why we do what we do.
