📢 Important Menu Update
Due to new guidance from the Arkansas Department of Health, I am temporarily removing Jalapeño Cheddar, Garlic Parmesan, and other breads made with fresh cheese, garlic, or similar ingredients from my menu while I work to ensure they meet the state's updated requirements.
Over the past week, the Arkansas Department of Health has provided additional clarification regarding the Arkansas Food Freedom Act and how it applies to certain sourdough breads.
The new guidance explains that breads containing ingredients such as cheese, fresh garlic, fresh jalapeños, and other Time/Temperature Control for Safety (TCS) foods may require a Process Authority evaluation to verify that the finished loaf is still considered a shelf-stable, Non-TCS food before it can be sold under the Food Freedom Act.
Because of this clarification, I am temporarily removing the following from my menu:
❌ Jalapeño Cheddar Sourdough
❌ Garlic Parmesan Sourdough
❌ Other breads containing fresh cheese or similar fresh TCS ingredients.
This is not because these breads have been found to be unsafe. The Arkansas Department of Health has simply clarified that these recipes may require additional review and documentation before they can be sold under the current interpretation of the law.
In the meantime, I'll continue baking the sourdough varieties that clearly meet the current guidelines, and I'm also looking into the Process Authority review so I can hopefully bring some of these customer favorites back in the future.
