Onion Chive Sea Salt.
If you have never had this type of sea salt on your baked potato, you have no idea what you're missing! And it so simple to make! Pick your chives when they're nice and bright and colorful, rinse them out, shake them off really good and let them dry in the sun for about ten days. Remove the flowers from the stem and mix in sea salt or sea.salt flakes. I used Maldon brand. Put in jar and store to use. It has a wonderful refreshing taste that is amazing on eggs, potatoes, sprinkle on bread and butta!

Manderine Oranges.
One of the many questions I get is, "Can you take a bulk item from the grocery store and divide it into smaller jars and re-can it?"
The answer is yes!
Here, I have taken a large can of mandarin oranges and divided it into eight sterile pint jars.
I am using the same simple syrup the oranges came in and I am leaving one inch headspace.
I debubble these well and wipe the rims with a hot cloth to remove any possible syrup that may have dripped. Add hot lids and rings and process them in the water bath canner for 20 minutes. Time starts once the water becomes a slow rolling boil. Once time is up, remove the lid from your canner and allow it to sit for 5 minutes before removing your jars onto the counter. Once you place your jars on the counter, do not disturb them for twenty four hours.
After 24 hours is up, remove your rings and wash your jars off. Allow your jars to dry and place them beautifully on your shelves. Enjoy!
