Salted caramel cheesecake, with homemade caramel. These are rich, creamy, and soft to the bite. But truly, all cookies should be soft to the bite. If you’re a crunchy cookie lover, I have some concerns.

The morning I went into labor I had to toss all my pre-made and colored icing in the fridge and cookies in the freezer so I could come back to them when I had some energy for it. It is nice to do a few at a time for a little creative fun! I got this cutter last year and never had a chance to use it before Christmas passed. This year, Christmas has passed but with the icing already made and cookies made, I couldn’t pass up the chance to decorate them!
