This is the sourdough bread loaf recipe. Still working on the roll recipe.

Sourdough Bread Loaf

2 cups of bread flour

1/3 cup of sourdough starter that’s been recently fed

2 1/2 tablespoons of vegetable oil

1 teaspoon of salt

2 1/2 tablespoons of sugar

1/2 cup warm water

•Stir the starter before measuring it out.
• Add all of your ingredients into your bowl. Mix by hand or in a stand mixer until all of the ingredients are incorporated.
• Knead on a floured surface. Form into a ball, put in a bowl and cover with plastic wrap.
• Allow it to double in size in a warm place. This will take anywhere form 6-10 hours depending on the temperature of your home and strength of your starter.
• After it has doubled punch down the dough.
• Knead again and shape into a loaf. Place into greased bread pan and cover with plastic wrap.
• Allow it to rise again until doubled.
• After it has doubled preheat the oven to 350 degrees. Remove the plastic wrap and bake for 30-40 minutes. It usually takes about 35 minutes. If the tops are getting darker than your preference, place a sheet of foil over the top to finish the cooking time.
• Allow it to cool before cutting so that the middle will not be doughy.

Spiced Apple and Fig Hand Pies
Ingredients:
1 Tbs Butter
1 1/2 C Granny Smith Apples, peeled and cut into 1/4” pieces
1/4 C Honey
1/2 teaspoon Apple Pie Spice (or Pumpkin Pie Spice)
1/2 C Dried Figs cut into 1/4” pieces (or dried cherries)
1/4 C Slivered Almonds
Pie Crusts
1 Tsp Powdered Sugar
2 pie crust doughs

Preheat oven to 425. In a 10” nonstick skillet melt butter over medium heat. Add apples, honey and apple pie spice. Cook 5-6 minutes, stirring occasionally until apples are tender. Remove from heat. Stir in figs and almonds. Set aside.

With 3” round cutter, cut 8 rounds from 1 pie crust. With 3 1/4” cutter cut 8 rounds from second crust. Place 3” rounds 2 inches apart on large ungreased cookie sheet. Spoon 3 tablespoons filling onto each round to within 1/4” of edge. Top with 3 1/4” rounds. Press firmly with fork to seal. Cut slits in top crusts.

Bake 12-16 minutes until golden brown. Cool 10 minutes. Sprinkle with powdered sugar.

You can use purchased refrigerated pie crusts or this recipe Irene liked for pie crust:

3 C Flour
1 tsp Salt
1/2 C Butter Crisco Shortening
3/4 C Regular Crisco Shortening
1 Egg
5 Tbs Ice Water
1 Tbs Vinegar
