Day 1 of market week: prep day 📝

Sure there’s dough day(s) & bake day, but prep day is just as important and sometimes just as full. I put my youngest down for her morning nap & let the older girls do some screen time so I could blitz through as much as possible. It’s always a puzzle to get it done but we made it, and even found a new favorite park in the afternoon 🛝

Let’s make some scones!

You & your ingredient costs will be thankful to use ONE base scone recipe for any flavor you want to create. With the exception of switching out an extract (i.e. almond or lemon instead of vanilla) or adjusting the hydration (i.e. like in this video, I put less milk than the base recipe calls for because of a wet inclusion), this base scone recipe is consistent and delicious!

🍓 MY BASE SCONE RECIPE

250g flour
100g sugar
2tsp baking powder
3g salt

1 stick frozen butter

115g discard
1 egg
10g vanilla

150g inclusion of choice - this recipe has 60g fresh then frozen strawberries, 50g fresh then frozen rhubarb, and 40g dehydrated strawberries

Mix all dry ingredients together and set aside, mix all wet ingredients and set aside. Leave butter and inclusions out.

Cut butter into 1-2TBSP chunks and put in the food processor with a scoop of your dry ingredients. Pulse until butter is shredded, usually 5-10 seconds.

Mix butter into dry ingredients. Add inclusions and toss to combine.

Add wet ingredients and gently combine the dough. Watch the video for how to do this and what to look for in fully mixed dough.

Weigh out your batches and form into discs. Place disc on plastic wrap, cut into 8 pieces, wrap and freeze. Be sure to freeze flat, you can stack them once they’re frozen!

To scale this recipe, simply figure out how many batches you want to make and multiple all ingredients. I also use the recipe calculator tool from .

I’ve done up to 12 batches of a single flavor at one time. I’ve kept them in the freezer for up to a month at a time and they bake up beautifully ❤️

I’m not a gardener yet, and I need to give myself grace to not try to do all the things all at once, but I do have a plan to focus on a new skill in every decade of my life:

30s: Sourdough
40s: Gardening
50s: Sewing
60s+: Be an unstoppable grandma

For now, I’ll continue to bake you lots of bread & try to make some small tomato plants happen this summer 🫡

Another bake week in the LBB universe!

This was a big one: I baked 100 loaves for the first time and ran my first preorder/market combo of the season! As anticipated, it was super fun & super humbling 🫡 and as always I am super grateful for your support and orders!
