Good evening!

Gothic Chicken is going through some changes. I was originally planning on being open this week and holding a porch market, however, some things in my family's life have changed. I accepted a full time position and am not sure what the next couple of weeks will look like. We are extremely excited for this opportunity for our family. However, once I have a hold on my new hours, I will reorganize Gothic Chicken to better serve our customers. I am not sure what this will look like yet.

Good evening! We started experimenting with a black sesame / whole wheat bread this week. I am going to keep playing with hydration and grain percentages - although this bread is TASTY.

Ordering is OPEN for Friday 5/1! It has recently occurred to me that I have not updated ordering terms on our website in quite some time...oops. I apologize if this caused any confusion. We are moving back to Friday pickup and deliveries for the summer and will be beginning porch markets towards the end of May. This is largely due to my job search and how I am not sure when I will gain employment and what kind of schedule I will have.

First bagel attempt 🖤 I built this recipe using diastatic malt powder as the dough conditioner. It will take a few attempts to figure out the ferment, as this batch came out gummy towards the center. However, I’m happy for a first attempt! Only improvement from here 😀

Pretzel dough fully bulk fermented in 2.5 hours! The hardest part about sourdough in April is adjusting to fluctuating temperatures and humidity levels. However, it does give it more time in the CR to develop that lovely funk 💪🏼🖤
