Fresh out of the oven and worth every layer. 🥐✨
These hand laminated, flaky croissants were just baked this morning — and they are exactly how croissants should be… Layers you can hear. 👏 Quality butter you can taste. 🧈 And lots of love mixed in. 🥰

Looking forward to our summer season when we’ll be able to share Bittersweet Bakery croissants with you all again!! ☀️

Cold outside, warm inside — tonight for dinner we enjoyed a family favorite: chicken & biscuits which paired perfectly with the first snowfall of the season. ⛄️

Vermont is really showing off tonight, turning into a winter wonderland right outside our window, and we have zero complaints — just full bellies and hearts overflowing with gratitude. 🥰

“Uh-oh! Why is our coffee cake erupting in the oven?!” 🌋

Today we were training a new baker and quickly found ourselves in the midst of a mini science lesson — because baking = science! 🧪✨

When our coffee cakes started overflowing the pans, I immediately assumed there was an error in one of the ingredient measurements. I mean, it would make sense! We had a BIG soupy mess and they just kept bubbling over 🌋.. perhaps too much leavener?? 🤔

We stood at the counter and went through the ingredients one by one, and quickly confirmed that the recipe was SPOT ON. 🤷🏻‍♀️😵‍💫

At that point, I reflected on the consistency of the batter. Her batch had come out smooth, shiny and viscous, like the consistency of macaron batter after completing the macronage, while mine is always thick and textured, and mat in color..

That’s when we discovered the real culprit:
OVER MIXING!! 👩🏻‍🍳

Over mixing builds gluten and kicks off the acid–leavener reaction too soon — so it rises fast and spills over before the cake has a chance to set!

Think: baking soda + vinegar = 💥

In order to avoid this, be sure to stir gently for a soft crumb and perfect lift. And if using the mixer, be careful to turn it off and on in between flour additions, and only mix until barely incorporated; don’t just run it constantly until the end. 💨🍰

If deciding “what’s for dinner?” feels harder than cooking it… same. 🥱

Bonus: the kids asked for seconds, so I’m calling that a win. 🙌🏻

This was the summer of memories.. and we packed in a lot. Let’s take a look back over August! ➡️
1. We filled the bakery with the sweetest treats. 🥰

2. Josh surprised EVERYONE with baby chicks! Can’t wait for fresh eggs down the road. 🐥
3. The kids stared school back up. Some were happier than others.. 😬

6. Spent countless hours in the kitchen.
