It’s been a big week for the shop here in Sandy Beach! Thanks to a ton of support from our community, family, neighbors, customers, and new friends, we were finally able to acquire some equipment to help us bake a more diverse offering of breads and pastries at a higher volume.
For those of you that were able to visit us when we opened, you can probably remember how empty the store was. Up to this point, we’ve been using a 30” home oven with pizza stones to bake baguettes and country bread, pouring hot water in the bottom to generate steam.
But now, we’ve got a real deck oven! This keeps a consistent temperature, creates its own steam, and will help us bake higher quality products on two stone hearth platforms. For the past month or so, our menu hasn’t changed much as we maxed out what we could do in one week with our small equipment. With the new oven and mixer, in addition to what we’re already making, we’ll start baking rye bread, almond croissants, focaccia, morning rolls, multi-grain, brioche, and a lot more. We also hope to open on Sundays very soon!
THIS WEEK, however, we will probably have a limited offering due to having spent a lot more time on installation than on prep. It’s going to take a few days to re-learn some things with a new set of tools, so bear with us as we take a ‘transition week’ to understand how it all works.
We’ll be open this Saturday from 8:00am-1:00pm at 3432 Wallace Dr. in the Sandy Beach neighborhood of Grand Island.
Don’t forget to visit the Red Bread Shed from Sourdough by Amanda just four houses down from us on your way in/out! We’ll be carrying a small selection of Amanda’s fantastic sourdough baked goods right here in the shop, too!
