Quick pizza update, Granby!

Last Thursday went really well. You showed up, the kitchen kept up, and we came away with learnings.
So here’s where we’ve landed. We’re going to keep doing one night a week — Thursdays, preorder only — for the next month or so. This pacing gives us room to get production to totally dialed in, and keep the pizza where we want it, while we figure out how to do more.

But for now it’s Thursdays. Order ahead at juliensbakery.com, pick a pickup time, and dine in or take it to go. We’ll keep orders open until we sell out.

Okay, Granby… we hear your likes and shares and texts and DMs and your clear answer to “would you come?” 🤣

So we’ve refined the plan for Pizza Night’s soft launch.

We’re going to ask that folks preorder online at juliensbakery.com. Pick a time this Thursday, May 14 between 530p and 8p, and we’ll have it ready then.

Dine in or take out — your call.

Orders stay open until we sell out.

And here’s why: this is a test run for our kitchen, our team, and our town. Preorders let us prep, pace the night, and actually enjoy it with you.

After this, we’ll aim to expand the offering and move to regular walk-in counter service — Friday, and Saturday evenings.

Three years ago, when we opened , the original idea included breakfast sandwiches, baked goods, salads — and sourdough pizza. That last one lasted about four days. (Some of you were there. You watched me try. We don’t need to revisit it.)

The truth is I didn’t have the equipment, the space, the time, or the team to pull it off. So we shelved it.

But here’s the thing.

I now have the equipment. The space. And the team. 😬

So, Granby — I have an idea.

I’m thinking about a soft launch next Thursday, May 14th— evening pizza at . And if the people show up, we roll it out properly: Thursday, Friday, and Saturday nights, on a regular basis.
