After my brother, C, tragically passed, I learned he had started and mastered making sourdough. There was so much science to learn about it that I was absolutely entranced. I’ve since learned that unlike yeast, sourdough’s fermentation process lowers the glycemic index, making it more digestible, and great for diabetics and PCOS patients. Quality means everything to me. It’s why I waited so long to start selling my product. That being said, I am taking a break from markets until October due to the heat and how it affects the bread.
