Homemade Oatmeal Cream Pies 🍪✨
​The Cookies:
Cream 1 cup softened butter, ¾ cup packed dark brown sugar, ½ cup sugar, and 1 tbsp molasses until smooth. Beat in 2 room-temp eggs and 2 tsp vanilla. Mix in 1½ cups flour, 1 tsp baking soda, 1 tsp cinnamon, and ½ tsp salt. Fold in 3 cups oats. Chill dough for 30–45 mins. Scoop onto parchment-lined sheets and bake at 350°F for 10–12 mins (edges light gold, centers soft). Cool completely.
​The Cream Filling:
Whip ¾ cup softened butter until fluffy. Slowly beat in 3 cups powdered sugar, 3 tbsp heavy cream, 1½ tsp vanilla, and a pinch of salt. Beat on high until light and airy.
​Assembly:
Pipe or spoon filling onto the flat side of one cookie, top with another, and press gently. Wrap and let sit a few hours for that perfect, soft bakery texture! Enjoy!
