It's time to announce this month's international pastry special! Head Pastry Chef Kristen has created for you a lovely Gateau Basque. This treat hails from the Basque region, which sits between northern Spain, and Southwestern France. It has a crispy, buttery, cookie-like crust, filled with vanilla pastry cream, and Kristen's version is studded with cherries. The Gateau Basque originated in the 18th century, and was likely then made with bread. A very regional treat, many families have their own recipes, and there is an annual festival (the Fête du Gâteau Basque) held in the French Basque town of Campo-les Bains. Come try a slice!
