FRESH TOMATO AND CUCUMBER SALAD

1/2 cup extra virgin olive oil
2 Tablespoons balsamic vinegar
2 Tablespoons red wine vinegar
1/2 teaspoon sea or kosher salt
3-4 cloves garlic, minced
10 fresh basil leaves
5 fresh oregano leaves
3 small fresh cucumbers (pickling or thin slicing)
2 large beefsteak tomatoes, vine ripened

Mince garlic or press through a garlic press. Let garlic stand in balsamic and wine vinegars for 10 minutes (this takes the "edge" off). Discard any garlic which has green sprouts in the center, as the flavor is too sharp and bitter for this salad - use for another purpose.

Wash basil and oregano leaves (pick at noon time on a sunny day for best flavor). Roll up leaves and slice into little strips (chiffonade). Chop and add to your best olive oil and allow to stand in oil while garlic marinates.

Meanwhile, prepare salad ingredients. Wash cucumbers and tomatoes. Peel cucumbers, leaving a scant amount of peel (helps with digestion). Slice cucumbers into 1/4 inch coins (circles).

With a sharp knife, remove stem and blossom end from tomatoes (a very small amount). Slice tomatoes into wedges, being careful not to crush and lose juice.

Place tomatoes and cucumbers in salad bowl and sprinkle with sea salt or kosher salt.

Combine olive oil with vinegars, whisking together well. Use to dress tomatoes and cucumbers; serve at room temperature.

Variations: Add 1 thinly sliced red onion, pitted oil cured black olives and fresh mozzarella, sliced (or use the small bocconcini).

FRESH REFRIGERATOR PICKLES

3 large cucumbers
1 bell pepper (green or red)
1 onion
1 Tablespoon salt
2 teaspoons celery seed
1/4 cup granulated sugar
1/2 cup white vinegar

Wash and scrub cucumbers. Slice into a medium sized bowl, leaving peel on, about 1/8" thick.

Wash and remove seeds from pepper; remove skin from onion and scrub well under cold running water.

Finely chop the onion and pepper; add to cucumbers. Sprinkle with salt and celery seed. Cover loosely with plastic wrap and set aside for 1 hour.

In a small saucepan, bring vinegar to a boil then remove immediately from heat.

Stir in sugar, stirring until dissolved. Allow to cool, then pour over cucumbers (after they have been sitting for 1 hour, as above).

Mix well; cover and refrigerate for at least 24 hours before serving.

SAVORY SWEET POTATO STICKS

3 med. sweet potatoes (about 1 1/2 lbs.)
3 C. rice Krispies, crushed to 3/4 C.
1/2 tsp. garlic salt
1/8 tsp. cayenne pepper
4 tsp. onion salt
1/2 C. all-purpose flour
2 egg whites
2 T. water
vegetable cooking spray
salsa (optional)

Wash potatoes and cut lengthwise into 1/2" slices. Cut slices into 1/2" strips. Set aside. In shallow pan or plate, combine Rice Krispies and spices. Set aside.

Place flour in second shallow pan or plate.

Beat together egg whites and water. Coat potatoes with flour,
shaking off excess. Dip coated potatoes in egg mixture, then coat with cereal mixture.

Place in a single layer on foil lined baking sheet coated with cooking spray.

Bake at 400 degrees about 30 minutes or until lightly browned.

Serve hot with salsa, if desired.

FRIED OKRA

1 1/2 lbs. fresh okra
1 egg, beaten
2 Tbsp. water
1 c. cornmeal
Salt and pepper to taste
Oil for pan frying

Wash okra, trim off tops and cut into 1/2 inch slices.

Mix the egg with 2 tablespoons water and toss with okra. Add cornmeal, salt and pepper. Mix well so all the pieces are coated.

Pan fry in a bit of oil over medium heat.

This dish must be cooked slowly and carefully so the okra dries out a bit in the cooking. Serves 6.

I'm currently inundated with canning tomatoes...and, while I'm canning, dehydrating and freezing all things vegetables right now, I cannot keep up with the tomatoes. So, canning tomatoes (mostly opalkas and romas) are for sale @$10 per half of a large sack. Anyone in the Glencoe/Stillwater area please let me know if you want some of these in the next few days.

Homegrown tomatoes, peppers, kale, corn, and squash will be available for those who PM us today (first come, first serve).

Please, due to the recent spike in covid cases, residents in the 20 mile range of Glencoe, Oklahoma for delivery availability on Saturday, July18th, 2020.

3 Slicing tomatoes (Heirloom and Hybrid)
3 Salsa/paste tomatoes (Heirloom)
4 Straight neck yellow squash
2 Lemon squash
An assortment of early summer peppers (Not the hot ones give us 2 weeks)
1 Mammoth Red or Green Head of Cabbage
4 Ears of Peaches and Cream Corn ( Sweetest on the planet)

$20 per bag

Some substitutions may be available PM us for availability. Pick up time or delivery will be determined Friday by 8 p.m. First come first serve -- Limit 20 customers.
