Kicking off June with these vibrant Rainbow Garden Veggie wraps 🌈🌯

A new month brings fresh energy to the table, and June is bursting with color! Here’s to longer days, farmers market finds, and meals that nourish from the inside out 💛🌿

Recipe below ⬇️

Ingredients:
-2 Atoria’s Family Bakery Spinach Lavash wraps
-⅓ to ½ cup hummus
-1 small cucumber, thinly sliced
-1 small carrot, shredded
-1 small bell pepper (red or yellow), thinly sliced
-1 handful fresh spinach or mixed greens
-Optional add-ins: cherry tomatoes halved, sliced avocado, fresh herbs (like cilantro or parsley), a squeeze of lemon or a drizzle of balsamic for brightness

Instructions:
-Wash and thinly slice all vegetables so they’re easy to layer and roll.
-Lay one Spinach Lavash wrap flat on a clean surface. Spread about 2 to 3 tablespoons of hummus evenly over the lavash, leaving about 1 inch of space at the top edge.
-Arrange the cucumber, carrot, bell pepper, and spinach evenly across the lower two-thirds of the wrap. Add any optional ingredients like avocado, herbs, or a squeeze of lemon.
-Starting from the bottom edge closest to you, roll the Lavash up tightly over the vegetables, keeping the roll snug as you go. Continue rolling until sealed, using the hummus to help it hold together.
-Place seam-side down and slice in half. Repeat with the second Lavash wrap and serve immediately.

-1 Atoria’s Family Bakery Traditional Lavash -1/2 cup purple potato slices, cooked
-6 to 8 slices provolone or mozzarella, cut into star shapes
-1 cup cherry tomatoes
-1 cup fresh mozzarella, sliced into rounds
-2 to 3 roasted red peppers, sliced into long strips

Instructions:
-Preheat oven to 375°F. Place the Lavash on a baking sheet lined with parchment paper.
-Arrange the purple potato slices in the top left corner to create the “blue” section of the flag. Add the cheese stars on top of the potatoes.
-Build alternating red and white stripes across the remaining Lavash using roasted red pepper strips, cherry tomatoes, and fresh mozzarella slices.
-Bake for 4 to 6 minutes, just until the cheese begins to soften and the Lavash edges turn lightly golden.
-Remove from the oven, slice, and serve warm.
