Coconut Crumb Sweet rolls + island-inspired bakes

You’re gonna want to be everywhere with these donut holes, recipe credit goes to Just Taste. They are GOOD. Like sooooo good. Make some, you probably have all the ingredients:

Donuts
• 5 cups vegetable oil (for frying - I used canola)
• 1 cup milk
• 1 large egg
• 2 cups all-purpose flour
• 2 tablespoons sugar
• 4½ teaspoons baking powder
• ½ teaspoon salt
• ¼ cup unsalted butter, melted

Glaze
• 1½ cups powdered sugar
• 3½ tablespoons whole milk (I used 2%)
• 2 teaspoons vanilla extract

Healthy No-Bake Chocolate PB Cookies by Joy Food Sunshine
1 cup natural peanut butter
1/4 cup honey or maple syrup
1/4 cup coconut oil
1/4 cup cocoa powder (I chopped unsweetened Ghirardelli cacao)
1 cup oats
1/4 cup unsweetened shredded coconut
1 tsp vanilla
1/4 tsp salt

Melt PB, honey & coconut oil → stir in cocoa, vanilla & salt → fold in oats & coconut → scoop cookies → chill until set

Last weekend I made my regular brown butter cookie base recipe, and split the dough for choco chip and ferrero rocher cookies 😍 ferrero rocher absolutely belongs in a cookie.

Banana 🍌 and banana chocolate chip muffins 😍

The recipe is from my favorite, ’s Baking, Quick & Easy Banana Muffins! Doubled the recipe, used an ice cream scooper and made 2 dozen muffins.

Tip I learned from my sister: freeze your very brown & ripe bananas - gives you more time to use them 🙂.

Sunday Bakes from my Grandma Lois’ recipe book. Today we tried a recipe that I believe is my Great Aunt, Phyllis’, cookie recipe. It’s literally called “cookies” and includes cornflakes, peanuts, and oats! I didn’t have regular oats so I used the nature valley honey and oats granola I had on hand 😅. They turned out so good! Such a great cookie base!

Here’s the recipe:
1 c brown sugar
1 c white sugar
1 c shortening
2 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
2 c flour
1 c cornflakes
1 c salted peanuts
1 c oats

Bake at 350 for 10 minutes!
