This week is a special one for us. šŸŽ‚šŸ¤ It’s Simon’s birthday week, and for the first time in a very long time, we decided to take ā€œa full week offā€.

If you’ve followed us for a while, you know that’s a big deal. Since last Thanksgiving, we’ve been running nonstop. Building a sourdough bakery in a tiny space takes a lot of moving parts, organization, heavy lifting šŸ’Ŗand problem-solving.

What many people don’t know is that Simon isn’t a baker by training—he’s an engineer. When we started farmers markets, he was there to help carry tables and boxes. When we opened the bakery, he quietly took over and engineered our entire sourdough production flow, helping us make the most of our limited space and keep everything running smoothly.

Because of Simon, Jess gets to focus on creating pastries, savory items, configuration of 100% sourdough bagels, dreaming up new ideas, and baking all the things she imagines. He also brings some much-needed consistency around here—otherwise there would probably be a completely new menu every day thanks to Jess’s endless ideas. šŸ˜‚

On a personal note, before Simon, I was preparing to leave my corporate finance/accounting life in NYC and move to Paris. Then I met him, and life took a different path. I moved to New Jersey, started a small baking business with his encouragement, and somehow ended up opening this tiny bakeshop together.

He has supported every step, challenge, and wild idea along the way. These days, customers—and especially the kids—often come in asking, ā€œWhere’s Simon?ā€ Everyone loves Simon, and the truth is, he loves everyone even more.

So this week, we’re celebrating him by giving him something he rarely takes: a full week off. šŸŽ‰

Another weekend prep is underway ✨

We’ll have all three flavors of our sourdough focaccia (Gochujang,Tomato cheese and green olive) this weekend (and lots of them!).

Mother’s Day at our bakery was beautiful, overwhelming, emotional, and unforgettable all at once.

This weekend did not go as planned. We prepped for many days for this day..Unexpected staffing issues delayed opening, with unfinished packaging, missing displays, backed-up tickets, and moments where we genuinely wondered how we would get through the day. There were pastries still cooling while customers were already lining up outside. Preorders piled up. We were exhausted before the doors even opened.

And yet… you all showed up with smiles. One customer quietly said, ā€œnot any one person left the line.ā€
I almost cried hearing that.

We know the waits were long. We know some experiences felt imperfect. We are still a very small team making everything fresh by hand every morning — sourdough, pastries, fillings, sandwiches, packaging, all of it. We are learning in real time how to grow without losing the care and soul that made people come to us in the first place.

We will continue improving. We will hire carefully. We will become stronger. But we also hope people can see the human side of small businesses like ours. There is no giant system behind the counter and not much room to fail with wrong hires — only tired hands, flour-covered aprons, and people trying their absolute best.

This Mother’s Day carried a deeper emotion for me personally. Life did not allow me to become a mother, even though I once hoped for it very much. Over time, I realized the love I could not pour into children found another place to go: into this bakery, into the real bread, into feeding people, into creating a space that feels warm and comforting to others.

Maybe that is why we care so deeply about every loaf and every customer who walks through our door.

To everyone who waited patiently, encouraged us, smiled at us, defended us, or simply stayed in line with kindness in your heart — thank you. You carried us through one of the hardest and most meaningful days we’ve had yet.

This little bakery may grow and change in the future, but these early days — chaotic, imperfect, heartfelt days like this — will stay with us forever.

We’ll show up again Thursday morning and keep baking.

Words can't express our gratitude for the love you showed us last weekend! Despite running on just two hours of sleep each day and pushing our little shop to its limits, it was incredible to see you all support us so much. You sold us out, and we got to meet so many new customers while making our longtime regulars proud. So many photos of people lining out the door in the rain, direct messages, and comments on 's post - really touched our hearts.

We remember the day we took the first photo finally opening up the wall - we were scared and excited at the same time but we said we will bake our heart out. Are we following our promise? šŸ¤

Another happy week with all of you šŸ¤

Today felt extra special—kids, puppies, customers chatting with each others outside waiting in line while we packed up fresh bakes in the morning.

We know we should post ahead with new flavors, but when we’re baking right up until opening, we just can’t always keep up. So we let go of that pressure and rolled with it—and you showed up for us. Thank you.

This week (and next): Banana brƻlƩe almond croissants, salted caramel croissants, mango purƩe tiramisu cups, and lots of sourdough bagels.

What a weekend šŸ¤

Sunday was extra special — our niece, Emma came to see us! Same haircut, same energy… a true mini-me in the shop 🄹 She even helped us out (including making sure our sign stayed up out on the street!). It felt like a small glimpse into something really personal — family, warmth, and the heart behind what we do.

Also all our sourdough bread completely sold out. Even our sourdough brioche loaves. That kind of support is the greatest reward for the quiet, overnight hours we spend baking.
