This week is a special one for us. šš¤ Itās Simonās birthday week, and for the first time in a very long time, we decided to take āa full week offā.
If youāve followed us for a while, you know thatās a big deal. Since last Thanksgiving, weāve been running nonstop. Building a sourdough bakery in a tiny space takes a lot of moving parts, organization, heavy lifting šŖand problem-solving.
What many people donāt know is that Simon isnāt a baker by trainingāheās an engineer. When we started farmers markets, he was there to help carry tables and boxes. When we opened the bakery, he quietly took over and engineered our entire sourdough production flow, helping us make the most of our limited space and keep everything running smoothly.
Because of Simon, Jess gets to focus on creating pastries, savory items, configuration of 100% sourdough bagels, dreaming up new ideas, and baking all the things she imagines. He also brings some much-needed consistency around hereāotherwise there would probably be a completely new menu every day thanks to Jessās endless ideas. š
On a personal note, before Simon, I was preparing to leave my corporate finance/accounting life in NYC and move to Paris. Then I met him, and life took a different path. I moved to New Jersey, started a small baking business with his encouragement, and somehow ended up opening this tiny bakeshop together.
He has supported every step, challenge, and wild idea along the way. These days, customersāand especially the kidsāoften come in asking, āWhereās Simon?ā Everyone loves Simon, and the truth is, he loves everyone even more.
So this week, weāre celebrating him by giving him something he rarely takes: a full week off. š
