The end of tweaking the recipe in the last 3 posts below. I found the flavor, this is the taste I want in sourdough.

I cut the starter back to 50g. Initial mix and bulk fermentation was very quick due to an 85f degree kitchen. Then a 38f rest in the refrigerator for 41 hours, cold bake. Amazing flavor.

Continuing on with the same recipe as below, added 20g water. Even with 15 hours of cold fermentation there is little detectable sour.

Next try will be with less starter and 30 hours cold to get some flavor in this King Arthur Special patent flour.
