Hey there, fellow gluten foes! π Long time, no see! Can you believe it's May already? I've been AWOL thanks to a foot surgery earlier this year but I'm back and better than ever with a few new tricks up my sleeve!
As someone with celiac disease, I am first and foremost a gluten-free baker. Everything I make and sell will be 100% free of that pesky protein gluten, every time. But when I started this GF baking journey, I knew I wanted to eventually incorporate options for folks with other dietary needs. The one I get asked about most is dairy and I'm thrilled to finally have some awesome recipes to officially introduce!
π₯ Peanut butter cookies - always dairy-free, no changes needed, completely flourless and dusted with flaky sea salt
π Banana bread - also always dairy-free, topped with poppy seeds and walnuts and a thin crust of sugar
πͺ Chocolate chip cookies - these have gone through several rounds of revisions, many of them delicious in their own right (that back row in the second picture was so good!) but this final recipe is absolute perfection with the perfect amount of spread and had my whole family begging for more
