Hey Good Dough Peeps! Happy September to you all. Today is a very important day here at Good Dough... it is Zach's birthday.
Zach is the most important person to our company. Zach was a student of mine at Alvin Community College, he worked for me at Viva la Cake Balls in Santa Fe (the master of the breakfast burrito), he worked for me at Haak Winery, he worked for me at the Cocina when the government shutdown started. He also lived with our family for a year while he was finishing up school. He unfortunately passed away entirely too young from an ATV accident. Today would be his Birthday! We are here to celebrate the life that he shared with us because he was always bigger than it!
When we decided to open a bakery and we started recipe testing, kolaches were one of the items we considered doing at the bakery along with other items. All of our Becky's have worked with Zach at some point in their lives and we all know and love him. Zach is from a Czech family and kolaches were one of those things he always brought to school and shared with us. He loved making them with his family and carrying on the food traditions he learned from his amazing mama.
After blind tasting three different recipes of dough, including Zach's, it was a unanimous decision to go with the Prihoda family recipe. It was amazing, so light and sweet, yet dense and the perfect vessel to transport all the goodness to you. After we ate it we said, "Dannnng, thats some Good Dough! OOOOooooOOO look at you, Becky's with the Good Dough!"... and it stuck. We are so honored that the family allows us to carry on Zach's legacy with this amazing dough, sharing our love and his love of food and family.
We have made a kolache in his honor. This was a pimento cheese recipe combined with candied jalapenos and bacon. He used to make at Viva la Cake Balls and it was a fam favorite. We call it the Zach Attack. The entire month of September we will have it on the top shelf in our case.
I've been able to tell this story about Zach to some, but this is the origin story of Good Dough. If you stop in, look on the microwave, you might see some familiar faces. Happy Birthday Zach! We love ya Chef!
