ocations dwindled to one, which finally left the boardwalk with the advent of casinos in 1979. The first offshore site, owned by the niece of G. Carl Tripician, preserved the fine quality and macaroon tradition. Ten years, two locations and much growth later, Tripician’s almond and coconut macaroons are still baked according to the original recipe in Absecon, NJ (that’s across the bay from Atlantic City). Our 2800 sq. ft. boardwalk theme retail candy store and baking facility is a must see for everyone! Speaking of .randobakery , here is the photo from my grandmother's photo album. We gave a copy to you back when we had our storefront in the Trump Marina Hotel & Casino. My Uncle John Pesce Sr from John Pesce Auto Repair in Ventnor Heights used to pick up a brown bag of your rolls from your bakery and drive to our house in Absecon. He would open his car door and the smell that came wafting out was absolutely divine! He'd hand us the bag so we could tear off a piece before we made it to the back door!
The rich history of Atlantic City and its small businesses that still exit today are what makes the Jersey Shore so unique. Fondly known as "Memom" by the kids who would come in after school to wrap macaroons, Memom loved helping out after her retirement. She was old-school and enjoyed chocolate coating our Almond and Coconut Macaroons by hand at times for 8-hours each day. We miss her dearly, but she will forever be a part of Tripicians Macaroons rich history.

Back in 2002, writer Christine Norris penned a feature story for Hitzel's holiday edition ("Pass the figgy pudding, please"). Titled "Merry Macaroons: Cindy and Mark Sabino take a bite out of popular, specialty cookie business," the article celebrated our craft. The cover captured the true heart of our family business, featuring a young Willie Sabino alongside our famous treats.

While both Ed Hitzel and Mark Sabino have sadly since passed away, their passion for local flavor lives on. Today, Cindy Lakes remains at the helm.
