Grandma Guerriero's Easter Bread...
This is a very different Easter bread...half bread, half cake...this is perfect if you are busy and don't have the time to make the traditional Easter bread or if you are not a bread maker and feel a little leery about making a yeast bread. The batter is very thick, it will not pour, you will need to scoop it into the pan, but after it is baked it will be dense enough to put in the toaster and toast just like regular bread...its yummy, there is still time before Easter to give it a try...Buona Pasqua...love m ❤ **EDIT** this picture is of half a recipe. I used a smaller tube pan, if making full recipe you would need to use a full size pan. ***The half recipe was done in 45 mins***...
Grandma Gurerriero's Easter Bread
5 cups of flour
8 tsps of baking powder
2 cups of sugar
2 sticks of butter, room temperature
8 eggs
pinch of salt
grated rind of TWO oranges and the juice
& an additional 1 TLB of flavoring, vanilla, orange, or lemon...(I just add all of them! I bake like that 😉
Cream your butter, sugar, flavorings, orange rind and juice... then add your eggs, mix well...to that add your flour, salt and baking powder...make sure your turn off mixer and scape down your bowl at least twice! Beat until mixed. The batter will be thick, you will not be able to pour it. Grease and flour a large Turks pan (OK had to throw that in there, just a fancy name for a bundt pan) or tube pan...bake at 350 for 1 hour, check if it is done after 50 mins, insert cake tester in center...Let cool and ice with a medium consistency icing flavored with same as cake/bread, or dust with powdered sugar...from my kitchen to yours...m
