July 14th, Quatorze Juillet, celebrates French culture. La Bastille refers to a medieval fort in Paris, and was taken by the people during the the French Revolution. There are military parades in France to commemorate the abolition of feudalism, but it’s more commonly understood and celebrated as an easygoing day to enjoy food, drink, company, and a few fireworks. Like the Fourth of July here!

Everything has been quite popular except for the tomato & goat cheese rose and spinach & feta croissant. We’d love to keep serving them - the tomato & goat cheese rose tastes like a pizzette that went on a trip to Nice, and the spinach & feta tastes like spanakopita but croissant-ified. It’s summer, so maybe too soon to tell - we’ll continue to try and adjust our menu and quantities produced so we have what you want when you want it.
And perhaps it goes without saying, but all of these items are pre-order-able.

🌳 hiking up El Yunque in Puerto Rico with my Uncle Ruben, and getting to hear stories and legends of the island. It’s this bright and warm memory of family that means a lot to me.

Our friends at Gainesville Vision have been patient with our parking, ahem, “arrangement” through the first few months of our being open. Because their lot is adjacent to our patio, many guests have assumed it is our lot.
Sometimes this is not a big deal, but unfortunately we’ve had a number of instances where folks have left trash or other personal belongings on the Gainesville Vision lot from their visit to us, or from the plaza on the way to us. This is a bummer, and our neighbor’s patience is wearing understandably thin.
We made a little parking guide in our story and story highlight to show where our lot is, and how you can get there. There’s often street parking too!

Christina is one of our service shift leads. She brings our Princess Margaret cake to all her family gatherings. Incidentally, she will *not* bring her talents and sass to south Florida (“never living there again”) shortly for medical school. We’re rooting for Vanderbilt 😬

Our service team puts "the finishing touches" on guests' visits through personal connection. We relish the opportunity we have to make guests' lives a little brighter through what our bakers and you do.
You are our secret ingredient in orchestrating these connections on a guest-by-guest and shift-by-shift basis. The service shift lead works largely in a guest service role, shoulder to shoulder with those you manage, and also carries the following responsibilities:
- Delegating side tasks, opening and closing tasks, cleaning tasks, and break times
- Communication hand offs between kitchen and service and shift switches during service
The positions may be split between the two stores: Mothercrust in NW Gainesville, and Petit Uppercrust in Haile.

This role is ideal for an ambitious service worker eager for the next step in their hospitality career. Or for an experienced service worker who wants to work with a great, supportive team, and products and service they can believe in. Barista experience is helpful, and wholly unnecessary. We will train you.
Training involves a crash course in kitchen work so you learn how our products are made. You will then have two to three weeks in service and service management specific training.

🍳there are so many options! Almost everyone could find one they like, and explore combinations of flavors they haven’t tried. They are also very silky and creamy. My favorite is goat cheese and chive 🐐🐐
💕what’s the nicest thing a co-worker has done for you?
💞 co-workers help daily, so it’s hard to pick just one. I think one thing was when a co-worker was so quick to cover a last minute thing so I could be with a family member when they left the hospital.
👧what smell reminds you of childhood?
🍋citrus! It reminds me of having orange juice for breakfast before school and lemonade during the summer after playing outside.

Why cinnamon rolls?
I made them a lot as a kid, and they remind me of home. Only the cream cheese, though. That’s my one true pair right there. When it was snowing and I got that day off school, and my mom was home from work, we’d always make Pillsbury ones. She’d put her homey touch on them, though. Our cinnamon rolls remind me of that.
What’s something we might not know about you?
I’ve read the Twilight series over 20 times, I watch the movies at least 3 times per week, and I’ve heard the audio books at least 15 times.

This will be a bit of a long one…
TL;DR - we are making more products every day :)
About a month ago, we created a guest feedback survey. We received over 200 (!) responses, and lots of them had detailed notes. Thank you thank you thank you - your investment in us means so much.
One of the most meaningful bits of data we received is that 83% of the guests who responded felt product variety was good to very good and 86% of guests who responded felt able to choose something enjoyable during the visit. We read the flip side: nearly 1/6 in guests who responded haven’t been able to order exactly what they want at Petit.
As a new bakery, figuring out how much to make and when is… well, hard.
That is perhaps to be expected, but after six weeks of baking and serving, your and our expectations for ourselves should be appropriately high. It’s no fun to grossly overproduce, even if we take solace in donating our leftovers. It’s even less fun to explain to you that we don’t have what you’d like when you’ve made a trip to see us. Too often, especially these past two weeks, the parenthetical part of that sign has held, and we have closed earlier than you or we have wanted because we silly did not make enough.
Given the pragmatic realities of running a baked-fresh-daily bakery, the Goldilocks rule for us is to make what we think we will serve plus a “buffer” so that every guest who visits is able to find something you like. Right now, the solution is simple: make some more! We can do that.
