Never settle for less than a soft, chewy macaron. Say no to a hard, crunchy shell from the store. ❌

My artisanal approach to a perfect merengue and macronage (folding) results in a chewy, soft interior. Perfect with a cup of tea. ☕️

Edit to add:
The macaron pictured, which was filled for Valentines Day, is a circle of cheesecake filling with a dollop of strawberry jam in the center. My apologies if I was using “baker-speak” when I referenced a dam.
