This is whose making all your baked goods btw (2009 version) - ft brown butter sesame slider buns - here’s the recipe🤘🏻
Ingredients
* 6 cups all-purpose flour
* 1½ cups whole milk, slightly warm
* 3 whole eggs
* 1 egg yolk
* 2 tsp yeast
* 2 Tbsp sugar
* 2¼ tsp table salt
* 7½ Tbsp browned butter, cooled but still liquid
* sesame seeds and egg wash for topping (about 1 egg and a splash of cream or water to brush the top)
Directions:
Before you go to bed, you have to put your bread dough to bed. 💤🌙
Cold fermentation helps with flavor. From slow rising in the fridge, the yeast takes their time. You end up with a more flavorful bread in the end.
Also in my opinion, it helps with timing. You get the dough together before bed, the most of the work is done. Just shape and bake the next day.
Night Before
1. Activate the yeast.
Add the warm milk, yeast, and sugar to the bowl of a stand mixer. Stir and let sit for about 5 minutes.
2. Add the eggs.
Add the 3 whole eggs and egg yolk and mix until combined.
3. Add the dry ingredients.
Add the flour and salt. Mix and begin kneading until a shaggy dough forms.
4. Add the brown butter.
With the mixer running, add the cooled brown butter 1 tablespoon at a time, allowing each addition to work into the dough before adding more.
Continue kneading for about 10 minutes, until the dough comes together and is smooth and elastic.
If you don’t have a stand mixer.. I’m so sorry
Anyway
5. First rest.
Leave the dough on the counter for 30 minutes.
Transfer to a large bowl or container and cover tightly. Refrigerate overnight for 8–10 hours to cold ferment.
TRUSSSTT me - cold fermentation is the way
The Next Morning
6. Shape.
Remove the dough from the refrigerator and divide and shape into buns. Arrange them close together in a greased baking dish or pan so they’ll rise and bake into a soft cluster.
You should get about 16 buns - 12 for burger buns OR like 20 ish if you make them smaller dinner rolls.
7. Final rise.
Cover loosely - with plastic wrap so they don’t dry out- and let rise at room temperature for 1–2 hours, or until doubled in size.
Yeah I know it’s a long time, play a game for something idk
8. Egg wash.
Whisk 1 egg with a splash of cream or water. Brush gently over the tops of the buns and sprinkle generously with sesame seeds.
9. Bake.
Bake at 350°F for 20–25 minutes, until the tops are golden brown.
I pictured these as ham & Swiss sliders but you could really do whatever. Mini burgers, buffalo chicken sliders, dinner rolls, uhhhh whatever you want. You have free will, use it.
Enjoyyyyyyy!! 🖤🍔
Yes I did steal the picture from my moms Facebook
