We almost named this one “kids bread.”

Pan de mie is a French sandwich loaf — pillowy, soft, a perfect crumb. But ours is something a little different. We wanted a bread that kids would actually devour, while parents felt good about what was in it. So we built it around heritage grains: Appalachian White and Rouge de Bordeaux winter wheats from the Shenandoah Valley, stone-milled into flour just miles from where this grain has grown for generations.

Soft enough for a toddler. Real enough for you.
