I am not a cupcake expert but a year ago a nice lady contacted me asking for purple cupcakes. An important birthday was coming up and she just had a serious heart operation and wanted to enjoy her life to the fullest. Unfortunately, I was going to be away at the time of her birthday and couldn't accept the order.
She contacted me again this year. I guess she had to cancel last year celebration and was going to do it this year instead. She wanted to get marble cupcakes with some chocolate buttercream and lots of pink and purple. I feel maybe I should have made the cupcakes more purple but I don't use artificial dyes... I tried to compensate with my marzipan roses that always come out adorable! I hope she had the best of birthdays!!!

I am starting to bake again. This is a vegan coconut pineapple cake! Hardly anybody ever orders this combination and it is a shame. It comes with a coconut cake, home made pineapple preserves, coconut butterceam and crunchy coconut brittle. It is decorated with mini marzipan pineapples. I just love the creaminess of the buttercream as contrasted with the crunch of toasted coconut flakes. And the pineapple preserves give you a little break from all these coco flavors.
Actually, this cake participated in a comedy of errors. First, the customer ordered it from my website even though it said I am not taking any orders till the end of the month. Then, she came to pick it up a day early.. when I was out shopping... I was so flustered when she called that I apologized profusely for my mistake and we ended up rescheduling. When I came home I realized that she was wrong and I was right... which was quite a relief... then, she ended up rescheduling the order once more...

So happy to be done with this order! All well that end well...

This cake was definitely an adventure. Took a lot out of me but it was worth it in the end. It was for my client's grand...

This cake was definitely an adventure. Took a lot out of me but it was worth it in the end. It was for my client's grandpa's 75th birthday. She really wanted a champagne kind of cake all in black and gold... I talked her out of it... I don't really use artificial dyes in my dessert with very few exceptions... and it is hard to achieve black color even with an artificial dye... you may use black cacao powder but it has a weird taste and I want a cake that tastes great. In the end we agreed on two cakes: chocolate dulce de leche and vanilla rose raspberry with white chocolate. I made the champagne bottle out of marzepan (once again, I avoid fondant because it is nasty) and I put her grandpa's birthday year on the champagne... the bubles are not really edible but we needed them to compliment the image.I was happy with it and the client's mom sent me this message: "The cake was AMAZING! Everyone loved it!👏👏❤🥰. Thank you you are awsome!! 👍😄. "

I have been playing and experimenting in the kitchen. It is fun... the only problem is you are stuck with a cake that you couldn't possibly eat by yourself... or at least you shouldn't... and since I used some mascarpone cream for this cake, it is not suitable for freezing... so I gave some away to my dentist and to my neighbour.... and I will take it to work tomorrow....but I must admit this cake is delicious... it is a new recipe and it is surprisingly simple... the cake part... the filling is another story... I made some raspberry rose mascarpone cream and some rose aspberrry Russian buttercream for the inside... and white chocolate buttercream for the outside... I threw some freeze dry raspberrries and some toasted black sesame seeds... I soaked half of the cake with rose milk concotion and left the other half untouched... I tried to come up with the best combintation and in the end... I have no clue... it is all delish... too bad summer is around the corner and I would like fit into my swimming suit... otherwise I would keep eating this cake all day long....😉

Sometimes a cake is not just a cake. This one was a birthday cake for a very nice customer who ordred it for his wife. He sent me me photos of glass art collages that his wife makes and it inspired my cake. It is pretty obvious that she loves color and animals and birds and butterflies and poppies.... So I made a bunch of marzipan flowers and rainbows and a chicken and a deer... and some caramel butterflies... all the colors are natural and vegan.. It is a chocolate cake with dulce de leche buttercream inside and chocolate buttercream on the outside... My client reported today that the cake was great... I wish I could have seen his wife's face when she saw the cake... I hope she really appreciated the effort her husband went through to give her what he thought would make her happy...

oh, what a cake! Or should I say what a torte!? I have just realized that there is a difference between a cake and a torte in English... the other day, a customer ordered a chocolate cake for his girlfriend and said "She doesn't want a torte, she wants a cake".. which made me wonder about a difference betweent the two.. .to make things even more complicated, a Polish word for a cake is "tort"... go figure...
Anyway, I believe this cake is a torte! Because the layers are thinner, and it is very creamy... the chocolate mousse is made with mascarpone cream, whipped cream, brown sugar and Dutch cocoa... and since I wanted something crunchy, I added hazelnuts... the layers are soaked with milk and brown sugar... and it is epic! and I made it for me me ME, for a change, because I wanted to try this recipe for a while... Also, my cleaning lady's husband adores chocolate and I wanted to kill 2 birds with one stone so I made it a day before her visit... and I gave most of this away.. to my neighbours, my hairdresser etc... and I just had the very last slice... it is still in my tummy... the girl whose recipe it is comes from Germany... I want to try her vanilla cake next... but I am going to spruce it up... maybe a layer of strawberry cream or passionfruit? Can't wait....

This is my only second REVEAL cake. It was a little stressful because, of course, people are quite particular about thes...

This is my only second REVEAL cake. It was a little stressful because, of course, people are quite particular about these things... The mom to be will have a romantic picnic in the park at sunset with the father of the baby.... they will cut into the cake and will find out the gender of the baby based on the color of the buttercream inside...... it is their first baby so it is quite emotional. I think I am a little jeal ous.... I wouldn't mind having a cake at sunset and cutting it to reveal blue or pink... but I guess it wasn't meant to be...
I made some marzipan dolphins... or is it a big tuna? People often talk about babies swimming in Mom's belly like a little fish... and they breathe in the water... Nature is amazing...
The cake was sponsored by the mom's good friend who is not going to be around for the reveal... It is a thoughtful gift, for sure!

Strawberry Vanilla again - but this time no dairy. Making it for the nicest customer. Very appreciative and not demending. That weekend was blocked since I was going away... so he ordered it for Friday but when I asked him when they are going to celebrate his wife's birthday, he said "Not till Monday". I work my other job on Monday but I just couldn't have someone get an expensive cake that would sit in the fridge for 3 days... I came back early on Sunday and made it for him and left work early on Monday to finish it.

One of my most popular GF cakes (Orange almond) is taken to another level when, besides its regular orange anise syrup, it is decorated with my signature vegan orange buttercream. I must say even I was surprised how tasty the buttercream was... I used boiled oranges both in the cake and the buttercream. It was yum of the highest order! I decorated it with some dry tengerine slices... they are chewy and sweet and sour and oh, so good!

Chocolate and toasted hazelnuts are a match made in heaven... I made this teeny cake for a friend and me... We went away...

Chocolate and toasted hazelnuts are a match made in heaven... I made this teeny cake for a friend and me... We went away to stay in a bed and breakfast in Cambria and it was a really sweet experience to sit on a porch of a 150 years old house, drink tea, admire a beautiful garden and share a cake. By the end of the weekend, the cake was gone.
I decorated it with a pretty black sesame marzipan leaf.
So hard to come back to Fresno and face a real world again :((
