I made a cake so I could cut it! There is so much advice online about how to cut a cake, so many videos and charts.. but the truth is I never cut a cake any other way but triangles and that is not the most efficient way for sure... I have customers asking me how many portions they can get and my knowledge is so theorethical... I know for sure you need to use a sharp knife (great is the cake is cold and the knife hot) and you should wipe your knife between every cut.... but that's that... so I decided to make a cake and cut it and see for myself. And if I were to make a cake I decided to make one of my favorite cakes.... So I made vanilla berry cake with mascarpone cream on the inside and Russian buttercream on the outside for stability.
Now I can feel more confident giving my cusomers advice. It wasn't that difficult. As long as the cake is cold it is easy peasy.
I managed to share the cake with my coworkers, my Korean accupunctarist and his assistant, my neighbors, my husband and still had a piece to go with my afternoon coffee.
It was a 6 inch 4 layer cake and you could easily feed 14 people but if pressed you could definitely squeeze out some more slices if you cut some of them in half. They wouldn't be generous slices and they would leave you craving more.... but maybe it is better this way.? Not to be totally satisfied but still feel like you want more? And dream about silky texture of the cream mixed with raspberries and the cake layers soaked with vanilla milk...
Actually, wouldn't it apply to other things in life? As long as we crave more, we are still alive.... ๐Ÿ˜œ

My dog Mila is my greatest fan. She loves my cakes. She has been known to sneak to a cake and eat... a half... or a whole cake, depending on the size. I think her favorite is Brazilian Yuca cake... These days, I try to be real careful and we installed a gate in the kitchen so she doesn't have an access. We were really close to a major catastrophy when a few years ago she sneaked into the kitchen, got a cake from the counter, unwrapped it and devoured it. This cake happened to be DEATH by CHOCOLATE and given the amount of dark chocolate and coffee the cake included, the dog would have died if she hadn't had her stomach pumped right away. Still, she was sick like a dog....
We were really worried but she made it. It might be the cayote in her.... ๐Ÿ˜œ

This is a gluten free small vanilla wedding cake with some home made strawberries preserves inside. It looks so virginal, right? Like a true bride... I just decorated it with some marzipan roses. I totally adore this look. The cake was a successssss!

Someone who is a baker with a lot of experience once said that you shouldn't accept orders for cakes you had not made before... that it will take you too much time and it won't be worth it in the end. I am on the fence about it. Financially, she is right for sure... but I like challenges and learning new things. But I admit, it can get really stressful and it may take you too long to figure stuff out to make it profitable. Plus, you may need to get ingredients that you normally don't use it.
I was asked to make a sheet chiffon pandan coconut cake. I made matcha chiffon cake before so I figured it can't be that different. So I accept the challange. I got pandan flavoring but then at the last moment also got pandan leaf powder because I try to use only natural ingredients. I ended up using an AI recipe, which was probably compilation of diffent recipes and it didn't really work out...actually, I think the cake is good but it was dense to be a chiffon cake and it was really flat so I just kept it for myself. I will make a cake next weekend. Then it turned out I was out of cake flour and running low on eggs so I had to rush to the store. I was terrified that I won't make it on time. In the end it all came together. I made a mascarpone whipped cream coconut filling, coconut jelly and decorated it with toasted coconut flakes and a marzipan pandan leave. I barely made it on time, I spent $20 on pandan leaf powder and flavoring which possibly I won't use again.... I asked the client if they enjoyed the cake and asked for any feedback: good or bad but so far not a word... maybe they are busy, maybe they didin't care for it... maybe it wasn't what they had in mind.... maybe I will never find out...I think I did my best given the limited time...
I am going to make a similar cake next weekend using the cake layer I froze and then I will know better how tasty it is. I love coconut mascarpne crean and toasted coconut... so I believe it should be tasty....

I discovered a really good recipe for a vanilla cake and a chocolate cake. The recipe is quite simple compared to most cakes I make and the results are impressive. The frosting is made of mascarpone cheese and whipped cream which is so delish even though it is not very stable, unfortunately... and the layers get soaked with sweet milk for vanilla and coffee for chocolate...It is so moist!! I had never made it for sale before but then I received an email from someone who wanted to order a cake . I am very suspicious of some emails because it is often a scam. This email was a little weird because the person that wanted to order a cake was very flexible when it came to chosing the cake and the pick up date... They made me basicaly decide myself (who does that?) so I decided to make that special vanilla cake with raspberry filling and fresh raspberries... When I asked for the phone number I got a local phone number but I was asked just to text and not to call because of his/her disability. I was suspicious again imagening that it was AI trying to trick me and I was really shocked when I received a payment! And when it came to the pick up, it turned out that I actually know this person since they buy stuff from me every year at the Fresno High annual block sales. We had a good laugh about me suspecting him to be an AI trickster.
This is not the end of the story, though. Sorry, my stories tend to be long....... I went to get a haircut to my favorite hair salon in Tower yesterday (if you need a hairs stylist recommendation ask me. She is great and affordable!) and it turned out that a new hairstylist who works there tried my cake and loved it and has been trying to find out who made it. Of course, it made me super happy. THE END

This is my daily afternoon snack... a strong cup of good coffee (I love Mariposa coffee El Capitan!) and a cake!!
Today it is a vegan chocolate cake with a tiny marzipan rose... I think the way you serve your food is so important! Supposedly, you eat with your eyes first. That's why I am always on the lookout for beautiful plates and cups... It makes such a difference... Imagine if I put my cakes on paper plates and ate them with a plastic fork... that would be a crime, I swear!!!
Anyway, this chocolate vegan cake is honestly better than most regular cakes you will ever try. I actually have a problem finding a great regular recipe for a chocolate cake... It is always disappointing... but my vegan and my GF chocolate cakes are soooo good! (am I braggin? ๐Ÿ˜ฎ)
Also, have I mentioned the mishap that happened when I tried different chocolate cake recipes and my dog decided to unwrap the Death by Chocolate cake and devour it when I went out? I guess she must have been suicidal because I made two chocolate cakes... and she went for the one that would kill her if she hadn't had her stomach pumped.... it was so traumatic that I am surprised I can still enjoy chocolate... but I haven't made Death By Chocolate cake since then...
I think there might be a novel by Agatha Christie when one of the characters dies after eating Death by Chocolate cake... that woman was a genius!
Anyway, chocolate rocks and in real life, if it is a good quality dark chocolate, it is actually good for you! and an aphrodisiac according to some sources...๐Ÿ˜‰

It has been so looong! For a while I didn't bake so much for sale. I have been experimenting in the kitchen. But this matcha tiramisu brought my enthusiasm back.. I like it when someone orders something a little different. Usually it is just vanilla and strawberry and chocolate.Vanilla strawberry and chocolate.........But I love experimenting with differnet flavors. And matcha is one of my favorites. Of course it takes time... since for this cake you make sponge cake layers and ladyfingers. I also had problems finding the mascarpone cheese. The place where I usually buy it was out and I had to pay double for a differnet brand in Whole Foods. I also got a bouquet of roses to decorate the cake and the roses withered within a day! But in the end everything came together... Here you got a matcha tiramisu decorated with plants and berries... a feast for the mouth and the eyes!!

I have made two sample gf mlni cakes. They are both vanilla with homemade strawberry preserves, strawberry buttercream and vanilla buttercream on the inside. One of them is made with Russian vanilla buttercream and the other one with Italinan. I haven't made Italian buttercream in a while... It is more challenging than Russian buttercream for sure. I thought I would have a clear winner between the two but I am not sure which I like better. These were sample cakes for someone whose wedding is in September and who needs a GF wedding cake... I haven't heard from her yet and I hope she liked them. I gave a slice to my neighbor and she loved them...and I enjoyed them as well. But you never know...

Sometimes you make a mistake baking... and have to pay for it dearly... I was making marble cupcakes and just before placing them in the oven I realized that I haven't added the sugar...๐Ÿ˜ฎAny takers for no sugar cupcakes?
I was devastated... an hour and a half of work, not to mention expensive ingredients were about to end up in the garbage. But on the second thought, I decided to scrape off the dough, mix it with sugar and try to bake it as cake layers... It worked and I was able to make a chocolate cake with chocolate mascarpone cream.... I love walnuts so I decorated it with walnuts and managed to deliver it to my friend in San Carlos in my ice box ... I can't say it was the best cake I ever made... but given the circumstances, it was quite an achievement!!

I was craving cookies! But something different, something I haven't done before. I came across a recipe for Iranian cookies called Kolompe. They are made with ghee or butter and are delicate and crumbly and inside they have a paste made with dates and walnuts and rose water and spices.. I added some pistachio as well... they are a little tricky to make ... mostly because with the heat, ghee melted and it became fluid... and it is supposed to be soft but solid... but in the end it all worked out...
they keep really well over several days...I gifted them to my friends in San Francisco to enjoy them with coffee... but had a fair share of them myself....๐Ÿ˜‰ I am looking forward to making them again soon... I call them "Our Sweetest Enemy" Wink Wink ๐Ÿ˜œ
