A cookie that breaks every rule about what a cookie should taste like. Cumin, green chili, and ginger, baked into a shortbread made with regeneratively grown Washington wheat and PNW butter.

This is not a plain shortbread cookie. And that’s the whole point.

It started with a bite of a Khara Biscuit, a savory, spicy cookie that’s been a staple of the Iyengar community in Bengaluru, India for generations. We brought it here. We think it belongs.

Chocolate and chile. Sounds bold. Tastes like the best decision you’ve made all week. Guittard Chocolate Company cocoa, fruity ancho chile, cinnamon, and vanilla in a buttery shortbread that hits warm and deep and stays with you.

We’re taking chocolate back to its roots.

This one traces back to xocolatl, the ancient Aztec precursor to everything we call chocolate today. Dark, spiced, and nothing like what cookies usually do with cocoa. We thought it was time someone brought that back.

Buttery shortbread. Salted toffee. A slow warmth that sneaks up on you and makes you reach for a third cookie before you’ve finished your second. Gochugaru, red miso, and toffee doing things shortbread has never done before.

Sweet, savory, umami. All at once. On purpose.

Inspired by Korean cuisine’s deep understanding that heat and sweet aren’t opposites, they’re collaborators. This one is proof.

Aarav and I have been hitting the pavement for most of his mid-winter break trying to sell our new single serve cookie bags to coffee shops. And today, the first coffee shop we visited honored us with our first ever foodservice sale.

Some meals are just meals. This one became a memory.

Aarav and I were out doing business development today, trying to get Talkback Snacks into local coffee shops, when we stopped for lunch at .

The owner came over, loved seeing a dad and son out together, and offered to buy us dessert.

Completely unprompted.

That cheesecake was delicious. But what we’ll actually remember is how that small act of kindness made us feel like we belonged there. The Pink Door has a permanent place in our hearts now.

That’s the power of delight. 🤍
