It’s June 5th, and somehow it’s National Gingerbread Day.
Not December. Not during the holidays. Not when you’re digging through decorations looking for that one missing ornament.

I don’t make the rules.
What I do make is a Basque Gingerbread Cheesecake—rich, creamy, caramelized on top, and packed with warm gingerbread spices. It’s the kind of cheesecake that makes you question why gingerbread got locked into a single season in the first place.
