It’s June 5th, and somehow it’s National Gingerbread Day.

Not December. Not during the holidays. Not when you’re digging through decorations looking for that one missing ornament.

I don’t make the rules.

What I do make is a Basque Gingerbread Cheesecake—rich, creamy, caramelized on top, and packed with warm gingerbread spices. It’s the kind of cheesecake that makes you question why gingerbread got locked into a single season in the first place.

Cinnamon Roll Cheesecake

Want to try one of my cheesecakes without committing to a whole cheesecake? This is the perfect option.

Built on a crust made from baked Pillsbury cinnamon rolls, this cheesecake features a rich homemade cheesecake layer topped with a homemade cinnamon swirl and finished with a sweet glaze that comes out of the can of cinnamon rolls. Every bite combines the flavor of a gooey cinnamon roll with the creamy texture of classic cheesecake.

It’s simple, comforting, and one of the most affordable ways to see what my homemade cheesecakes are all about.

Warning: It may convince you that cinnamon rolls and cheesecake were always meant to be together. 😋🍰

📢 ATTENTION ALL HUMANS (AND OTHERWISE):

Pride Month? Election season? The global debate on whether the Earth is flat or a sphere?

Listen, I don’t do politics. ❌

I don’t care how you live your life. I don’t care how you vote. I don’t care if you're an alien, a medieval knight, or a sentient stalk of broccoli.

My job is simple: keep the oven hot, the graham cracker crust perfectly crisp, and the cream cheese flowing. 🍰

The way I see it, excellent cheesecake is the ultimate neutral ground. It doesn't pick sides, it doesn't argue on the internet, and it tastes good no matter who you are.

So let’s put the debates on pause for five minutes. Drop the signs, step away from the keyboard, and JUST EAT MY FOOD.

This Bourbon Bacon Cheesecake is the strangest thing I make.

It’s the only cheesecake that gets unanimous approval in my house. Every single person here loves it.

And yet, it might be my most divisive dessert.

Some people aren’t fans of the texture. Some think bourbon and bacon have no business hanging out in a cheesecake. Others take one bite and immediately ask when I’m making it again.

Maybe it’s the sweet-and-savory combination. Maybe it’s the bourbon. Maybe it’s the bacon.

All I know is that nobody is neutral about this cheesecake.

You either wonder what I was thinking… or you wonder why you didn’t try it sooner. 🥃🥓🍰

The internet is losing its mind, ATM manufacturers are crying, and historians are pointing out that putting living people on currency has been illegal for 160 years.

But hey, if we're doing high-value, highly debated luxury items today...

Our cheesecakes might not have a congressional act named after them yet, but they are rich, structurally sound, and guaranteed to hold their value against inflation (mostly because you’ll eat the whole thing in one sitting).

Most people find out I sell cheesecakes first. But yes, I also sell full 5x9 loaves of bread because I enjoy making my kitchen smell like a small-town bakery at all times.

Current lineup includes:

• Zucchini bread
• Rye bread
• Sandwich bread
• Apple bread
• Brioche bread
• Strawberry bread
• Pumpkin bread

Some are sweet. Some are savory. Some disappear before they even cool off on the counter.

This banana cream cheesecake is what happens when banana pudding stops being humble.

A buttery graham cracker crust holding together layers of real bananas, thick banana pudding, and rich cream cheese filling like some kind of dessert engineering miracle. Not one layer of bananas. Two. Because restraint is for salads.

Cold, creamy, heavy enough to change your mood for the rest of the day. Every slice tastes like banana pudding showed up overdressed and decided to ruin store-bought desserts forever.

You could share it.
But then you’d have less cheesecake.
