Tip Tuesday!!

Ever opened your gel food color bottle and found it all dried up? Don’t toss it just yet!

A few drops of food-grade glycerine can bring your gel colors right back to life.
Just add 2–3 drops, mix gently with a toothpick or spatula, and you’ll see the texture soften again.

✨ Always use food-grade glycerine only.
✨ Add little by little — too much can thin the color.

WE’VE ALL BEEN THERE! 🤦‍♀️
It’s one of those days where you’re rushing to get a cake in the oven. You’re moving fast, skipping a few “minor” details, and feeling confident... until you peek through the oven door. Your heart sinks right along with the center of that cake!
With no time to restart and client pickup time approaching soon, frustration starts to creep in. You followed the recipe, so what went wrong?

The culprit is often something we overlook in a hurry: Temperature. 🌡️

TUESDAY TIP: THE ROOM TEMPERATURE SCIENCE
Understanding the “why” behind your ingredients is the ultimate secret to a perfect bake. It’s not just a suggestion; it’s chemistry!

The Magic of Emulsification
Baking is all about creating a stable emulsion - bonding fats and liquids into a smooth, airy mixture. For this to work perfectly, your ingredients need to be in the “sweet spot” of 20–22°C.

WHAT HAPPENS WHEN THINGS ARE OUT OF BALANCE?
• Butter too cold: It stays chunky and refuses to trap the air bubbles needed for that light, fluffy cake rise.
• Butter too hot: The fats melt too early, weakening the structure and leading to that dreaded cake collapse.
• Cold eggs: Adding them to creamed butter causes the fat to “seize.” This breaks your emulsion, leaving you with a curdled batter and a grainy, uneven crumb.

THE FACT:
When all your ingredients hit that uniform room temperature, they work in harmony to trap air efficiently. This ensures a stable batter, a consistent rise, and that professional, melt-in-your-mouth texture every single time!!

Don’t let a rush ruin your masterpiece. Patience and planning are the secret ingredients to a perfect cake!

Honored to be featured in ’s latest issue!
Thank you, Kelly, and thank you Dina for this beautiful collaboration for Violet.
A special thank you to .ice for sending over the lovely purple fondant!
I also worked with Satin Ice Gumpaste to create these sugar flowers.

To capture the true essence of these hydrangeas, I used my own custom food-grade cutters and intricately detailed veiners, designed to replicate every natural petal texture. This collection has been a long time in the making and perfecting, and I look forward to sharing the launch with you very soon. Stay tuned…

Forever Violet
This cake is my humble tribute to Violet - a gifted and gentle soul whose art and warmth touched everyone around her. Though she left us last year, her spirit continues to live on in every stroke of creativity and every memory she gifted us. Unfortunately, I never had the chance to meet her personally, but chatting with her always felt so good… she had a way of making every interaction warm and kind.

Created as part of a collaboration with my dear artist friends, this cake carries hand-modeled sugar hydrangeas - delicate blooms that symbolize heartfelt remembrance, love, and grace, just like Violet herself. She may be gone, but her light and artistry will never fade. 💜
