Truth be told, Moonlights exist because Chef didn’t want to cook dinner when he got home either! 🫣🤩

This week’s Moonlight features:
🌮 Chicken and brown rice enchiladas
🧀 Jack cheese
🌽 Hominy
🌯 Rolled in flour tortillas
🧀 …and then topped with even more cheese!

The sauce recipe came from a small town in Mexico and was reborn right here at 1115 Caroline Street. It’s rich, gooey, comforting, and absolutely hits the spot.
