Hi Everyone. Our popular Baja Chicken Enchilada Soup recipe was inadvertently left out of our Adelia's Recipe book. So before we shut down this FB page at the end of the month, we wanted to share it with all of you.
Serving 6-8 people
Estimated prep and cook time: 60 minutes

Ingredients:
1 medium yellow onion, chopped
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
2 ounces canned diced jalapenos
1 cup frozen whole kernel corn
3 cups canned diced tomatoes
1 โ€“ 15oz can cooked black beans, drained and rinsed
1 tsp ground cumin
1 TBS Mexene chili powder
1 TBS dried cilantro
Salt and Pepper to taste
2 quarts chicken stock
3 cups cooked chicken
1 ยฝ cups Masa Harina corn flour
ยพ - 1 pound soft yellow cheese (Velveeta)
Directions:
In a stock pot, saute onions and peppers in 2 TBS olive oil until tender. Add corn and tomatoes and continue to cook for 5 minutes. Add spices and stir well. Cook for 2 or 3 minutes more then add Masa Harina and stir well until thoroughly mixed. Add stock and chicken and cook for 30 minutes. Add drained black beans and cheese. Continue to simmer for another 15 minutes.

Hello everyone!!!

Just needed to pass on some information to everyone that bought a recipe book. We have a mistake we need to bring to your attention.
On page 17, the corn chowder recipe does not list how much corn is used so the correct amount is 6 cups of frozen corn.

I took Angel Rose for a Last Meal at Adelia's today and thanked Elaine for taking her from donughts to recipe books. I then realized that Sarah had an even longer history with them! Dr Doyle Haag was our doctor when she was little and we lived in Georgetown. She got shots one day and when we left his office, I took her to Dixie Cream for a donut apology...and had to take her for a donut after every subsequent doctor's visit... That was 1976. Enjoy retirement Elaine and Gerald, and Thank You for taking care of us all these years
