Cauliflower Tofu Fried Rice. Ingredients
1 Large bag of green giant rice cauliflower
With peas and carrots from the freezer section. 2 Tablespoons vegan butter
1/4 cup of Just eggs , whisked
½ cup chopped onion
1-2 teaspoons minced garlic
3 Tablespoons lite soy sauce (I use ketchup manis) , more if desired
½ teaspoon sesame oil , or oyster or fish sauce
Salt and Pepper , to taste.
Instructions
Place butter in a large skillet or wok. Add onions Cook for 2 minutes. Then stir in garlic. Push to one side and add the eggs to the skillet. Scramble and then stir together. Gently stir in cauliflower rice.
Add soy sauce and sesame oil and toss to coat. Salt and pepper to taste. Once cook. There will be some water from the cauliflower rice. Drained as much as you can. Cook cauliflower rice for another 10 minutes on high. Serve while warm.
Notes
Additions:
Can add more veggies like mushrooms, chopped broccoli and/or bell peppers.
For the meat eater. You can add in cooked protein like diced chicken, pork, steak or shrimp.
