Cauliflower Tofu Fried Rice. Ingredients

1 Large bag of green giant rice cauliflower
With peas and carrots from the freezer section. 2 Tablespoons vegan butter
1/4 cup of Just eggs , whisked
½ cup chopped onion
1-2 teaspoons minced garlic
3 Tablespoons lite soy sauce (I use ketchup manis) , more if desired
½ teaspoon sesame oil , or oyster or fish sauce
Salt and Pepper , to taste.
Instructions

Place butter in a large skillet or wok. Add onions Cook for 2 minutes. Then stir in garlic. Push to one side and add the eggs to the skillet. Scramble and then stir together. Gently stir in cauliflower rice.
Add soy sauce and sesame oil and toss to coat. Salt and pepper to taste. Once cook. There will be some water from the cauliflower rice. Drained as much as you can. Cook cauliflower rice for another 10 minutes on high. Serve while warm.
Notes

Additions:
Can add more veggies like mushrooms, chopped broccoli and/or bell peppers.
For the meat eater. You can add in cooked protein like diced chicken, pork, steak or shrimp.

Dark chocolate covered roasted hazelnut bark.

Ingredients

3-cups of raw hazelnut
2 - 2.8 ounces of 70% Dark chocolate bar

Directions

Preheat oven to 350

Roast hazelnut for 10-15 minutes until golden brown. Keep a close watch . It can burn quickly.

Use a double boiler to melt chocolate. Once chocolate is completely melted. Quickly pour over roasted hazelnut . Make sure all of the hazelnut is covered with all the delicious chocolate. Let is set on the counter overnight or for a quicker set . You can put the fridge. Break the chocolate into uneven bark pieces.

*Vegan Italian Zuppa Toscana*

A quick 30 minutes Vegan Zuppa Toscana soup is perfectly creamy and comforting. Potatoes, vegan sausage and kale are loaded up in a super flavorful broth!

Ingredients
* 1 tablespoon olive oil
* 8-16 ounces vegan Italian sausage*
* 2 tablespoon vegan butter
* 2 tbsp flour
* 1 yellow onion diced
* ½ tablespoon fennel seeds roughly chopped
* 1 teaspoon oregano
* ½ teaspoon black pepper plus more to taste
* red pepper flakes to taste
* 3 cloves garlic diced
* 4 cups water
* 1 cup non-dairy milk, unsweetened I used Almond milk
* 2 teaspoon Better Than Bouillon No Chicken Base**
* 5 small yellow potatoes (or 2 large ones) peeled and diced into 1" cubes
* 2 cups kale stems removed and chopped

Instructions
* Heat the olive oil in a stock pot over medium heat. Add the sausage and break it apart with a wooden spoon. Allow the sausage to brown, stirring frequently, for 7-10 minutes. Remove the sausage from the pan with a slotted spoon and set aside.

* Add the butter to the pot and let it melt. Slowly whisk in the flour until the mixture is smooth and bubbly.

* Add the onion, fennel seeds, oregano, black pepper and a pinch of red pepper flakes and stir to coat evenly. Continue to cook until the onion begins to soften (approx. 5-7 minutes). Add the garlic and cook for an additional 30 seconds.

* Slowly pour in the water and milk. Add the bouillon and stir until it is combined. Add the potatoes to the pot, cover and bring to a boil. Once it has reached a boil, remove the lid and lower the heat. Simmer, uncovered, until the potatoes are fork tender (approx. 10 minutes).

* Add the kale and most of the cooked sausage back to the pot and cook for an additional 5 minutes.

* Serve the soup topped with more black pepper, red pepper flakes and the leftover sausage pieces. 

* You can serve this with some crusty bread for dunking.

Spiced vegan burger. Give your classic favorite a modern twist. Revamp with this recipe idea. Layers of brioche bun, aloo tikka, crunchy onions, juicy tomatoes, crisp lettuce and chili mayo make this the ultimate veggie burger. So easy, so good!
Potato burger (Aloo Tikki)

INGREDIENTS

* 2 large potatoes, boiled, peeled and mashed
* 1 white bread slice, soaked in water or ½ cup breadcrumbs
* ¼ teaspoon ground turmeric (turmeric powder)
* ½ teaspoon ground cumin (cumin powder)
* 1 teaspoon chat masala
* ½ teaspoon garam masala
* ¼ teaspoon red chili powder
* 1 green chili, chopped (optional)
* ¼ cup red chopped onions
* 2 tablespoons chopped coriander (cilantro) leaves
* A bag of frozen peas and carrots
* 1 cup of finely chopped fresh spinach
* 1 cup breadcrumbs, for coating
* Oil, for shallow frying
Notes
* 4 brioche or regular burger buns,
* 4 tablespoons butter for buns
* 1 cup chili mayonnaise ( mix 2-TBSP mayo & 1 TBSP Sriracha) optional
* 1 cup sliced onions
* 1 large ripe tomato, thinly sliced
* Boston lettuce , fresh spinach or romaine lettuce
* French fries, or Kettle chips to serve

Instructions
Aloo tikki (Mashed potato patties):
1. Squeeze out excess water from soaked bread.
2. Combine all the ingredients except oil and breadcrumbs for coating in a large bowl. Divide the mixture into 4 even portions and shape each portion into a disc. Coat in breadcrumbs. Set aside.
3. Meanwhile, heat oil for shallow frying in a large frying pan over medium-high heat. Add the patties and cook for 2-3 minutes each side or until golden brown. Transfer to a plate.

Aloo tikki burger:
1. Spread a tablespoon of butter on the cut side of burger buns. Place the buns in the pan with cut side facing down. Toast until golden brown. Remove from pan.
2. To assemble the burger, place the base of each burger bun on serving plates. Top with chili mayo, aloo tikki, onions, tomatoes and top of burger buns. Serve immediately.
3. Add a side of French fries if you like.
