Did someone say Good Roads Croissants?
Now, hold your horses. It’s not that simple. Read on.
If there was a Pittsburgh Food Museum, you’d expect to see a croissant from Jean-Marc Chatellier's French Bakery
Perhaps better suited for a museum is Jean Marc’s Rondo Dough Sheeter. A most crucial instrument in making his famous croissants, palmiers, and nut rolls.
Jean Marc is now retired and as luck would have it, that very dough sheeter has made its way to Frankford, West Virginia and is now in my possession. I am honored to carry it forward as a new generation baker.
It will take a tremendous amount of work and practice to familiarize myself with my new machine. I’ll start with my pie doughs and sweet rolls and explore onward from there. No guarantees, but I think I can safely say 2027 will be the year of a Good Roads Croissant.
